Question:

French vegetarian?

We're inviting some people over to our new apartment over the weekend and I am cooking a potato au gratin as the entree and we will have crackers and cheese with some french wine as appetisers.. I also want to add a salad, but cannot think of a French salad (we're vegetarian, which means no egg as well). Can anyone suggest a nice easy to make french salad? for dessert am thinking chocolate mousse or chocolate mousse ice cream... any suggestions?

  1. greens with apples and cashews topped off with an olive oil/sugar dressing (or rasberry vinagrette)

    What time should I come over ;=)


  2. My suggestion is to serve them something other than French food.  Why would you cook them something they can get at home?

  3. If you're veggies and won't eat eggs, how can you eat ice cream?  

    Just asking...

  4. Maybe a nice lentil salad made with those little green french lentils, a little french feta, diced cucumber, onion, tomato, black olives, herbs, garlic, olive oil and lemon juice.  It will give you some protein as well.  Serve it on a bed of baby greens.
