  1. Can of diced tomatoes, roasted corn, two peppers of your spice choosing, chili powder, cumin, and Cheyenne pepper, then you mix it all together and throw what ever else it needs in. And then enjoy.

  2. Go easy on the jalapenos if you don't like it hot!!!

    INGREDIENTS

    3 pounds roma (plum) tomatoes

2 ounces roma (plum) tomatoes, chopped

    1 tablespoon garlic powder

    2 tablespoons lemon juice

    2-1/4 teaspoons salt

    1-1/2 teaspoons ground cayenne pepper

    3/4 teaspoon ground cumin

    1/2 red onion, chopped

    1/2 white onion, chopped

    1/2 yellow onion, chopped

    1/2 pound jalapeno peppers, chopped

    1/8 bunch fresh cilantro, chopped

    DIRECTIONS

Bring a large saucepan of water to boil. Briefly place 6 pounds tomatoes into water to loosen skins and set color. Drain, peel and crush.

Mix chopped tomatoes, garlic powder, lemon juice, salt, cayenne pepper and cumin into the saucepan with crushed tomatoes. Whip to desired thickness. Bring to a boil. Mix in red onion, white onion, yellow onion, jalapeno peppers and cilantro. Continue boiling until vegetables are soft and mixture has reached desired consistency. Remove from heat. Refrigerate until serving.

  3. Don't used canned tomatoes! Use fresh tomatoes, cilnatro, parsley, avacado if you want.

  4. Here is mine:

I boil 4 tomatoes.  First I cut an "X" at the bottom, so the skin will com off easy

when boiled i cut them and add the juice and garlic, peppers, seasonings, touch of oil, and cilantro.

  5. definitely use fresh tomotaes (unless you're in a jam). they have a much better consistancy for fresh salsa.

4 pounds vine-ripened red and/or orange tomatoes (about 5 medium)

    1/2 medium onion (preferably white)

    1 cup fresh cilantro sprigs

4 fresh serrano or jalapeno chiles, seeded and chopped

    2 teaspoons minced garlic

    2 teaspoons sugar

    3 tablespoons fresh lime juice

Kosher salt and freshly ground black pepper

Quarter and seed tomatoes. Dice the tomatoes and transfer to a bowl. Finely chop enough onion to measure 1/2 cup and chop cilantro. Stir chiles, onion, cilantro, and garlic into tomatoes with sugar and lime juice and season with salt and pepper.

  6. INGREDIENTS:

        * 3 tablespoons finely chopped onion

        * 2 small cloves garlic, minced

        * 3 large ripe tomatoes, peeled and seeds removed, chopped

        * 2 hot chile peppers, Serrano or Jalapeno, finely chopped

        * 2 to 3 tablespoons minced cilantro

        * 1 1/2 to 2 tablespoons lime juice

        * salt and pepper

    PREPARATION:

Put chopped onion and garlic in a strainer; pour 2 cups boiling water over them then let drain throughly. Discard water. Cool.

Combine onions and garlic with chopped tomatoes, peppers, cilantro, lime juice, salt, and pepper. Refrigerate for 2 to 4 hours to blend flavors.

  7. Roasted Salsa - I must worn you this recipe is very hot. If you prefer a mild salsa feel free to leave the vain and seeds out of your two jalapenos.

    This recipe calls for:

    5 Roma Tomatoes

    1/2 Medium Size Onion

    2 Medium Size Jalapeno Peppers

    2 Large Cloves of Garlic

    1/2 Teaspoon Salt

    1/2 Teaspoon Garlic Powder

    1/2 Lime's Juice

    1/4 Cup Cilantro Leaves

1/2 Tablespoon Extra Virgin Olive Oil

    Cooking Spray

    First Step: Preparing Tomatoes

Take two of your roma tomatoes and slice them very thin. Then using cooking spray, coat a cookie sheet and place the tomato slices on top. Second Step: Roasting Tomatoes

Next pop your tomato slices into the oven on the top shelf and set the oven to broil. Once they become very shriveled remove them. It is extremely easy to burn them so watch carefully.

Third Step: Chopping Jalapeno, Onion, and Garlic

In your food processor chop up:

    1/4 Medium Size Onion

    1 Medium Size Jalapeno Pepper

1 Large Clove of Garlic (not bulbs)

(Note: This "half" of the ingredients will be roasted. The other "half" will be used raw)

    Cooking Jalapeno, garlic and Onion

Forth Step: Cooking Jalapeno, Garlic, and Onion

In a skillet at medium heat pour 1/2 tablespoon of olive oil. Then place the chopped jalapeno, garlic and onion on top of the oil. Cook this mixture until the onions appear wilted.

    Chopping Tomato Mixture

    Fifth Step: Chopping Remaining Ingredients

Next chop the remaining tomatoes, 1 clove garlic, 1/4 onion and 1 jalapeno.

    Roasted Salsa Condiments

Sixth Step: Chopping in Last Condiment

To this tomato mixture chop in:

Cooked Onion, garlic and Jalapeno Mixture from step four

    Roasted Tomato Slices

    1/2 Teaspoon Salt

    1/2 Teaspoon Garlic Powder

    1/2 Lime's Juice

    1/4 Cup Cilantro Leaves

    Finished Salsa

Walla! You have made your first batch of the worlds greatest salsa. Now you get to go impress everyone with your new talent.
