Question:

Fried plantains..ripe or green????

i recently visited miami and experienced fried plantains for the 1st time. they served them with many cuban and colombian foods along with black beans and rice. they are so delicious..crispy on the outside and slightly sweet and soft on the inside.

i am going to attempt to make them, but i am not sure if u fry them when they are green or ripe and brown?? i am not making the squished ones tho.

  1. Green plantains are hard and used to make a saltier plantain dish: peel the plantain and cut into circles about 2 inches thick and then fry, take out of the oil and then mash with a potato masher or big glass bottom and then return to the oil and cook a little more and then remove and sprinkle with salt, these are called "tostones" in Venezuela.

    Yellow plantains are not as sweet as the darker ones.  They are "harder" and not as soft as the riper ones.

    Darker plantains are the sweetest and softest.


  2. ripe and yellow....lol if its brown then its all soft and mushy....if you fry it green it won't be sweet...and i love how they taste too

  3. Ripe! Then top with real whipped cream or ice cream, nuts and drizzle chocolate over it, OMG!!!!!! Too good!

  4. Plantains get sweeter as they ripen, and I'm sure that they are fried at all stages of ripeness.  But I think commonly you use the green ones.

  5. If you want to make salty plantain chips you would use green ones and salt them.

    from what it sounds like you would use ripe ones for the sweetness.

  6. Typically we fried them when they are riped for the sweet taste. The riper they r the sweeter it is. Buy one that is somewhat ripe, place it in a dark cupboard for a day or two and when it begins to get the black spots I would use it. Just slice it thinly and place in a lil bit of oil, turning a couple times!

    The green ones are used for a more savoury taste and used mostly to make plantain chips!
