Question:

Fried rice, secret in squeeze bottle?

I went to the Chinese takeout place the other day, ordered shrimp fried rice and watched them prepare my order. The woman fried up the ingredients and all of a sudden she grabbed a squeeze bottle (it was dark and loose liquid), when she poured it on the rice a nice aroma filled the place. Could it be a mixture of blend of oyster sauce, sesame oil and garlic?? If not, what is it? I'm trying to do this at home with no luck. It doesn't taste the same. Help Please!

    It could also be plum sauce.

  3. I'm guessing it is toasted sesame oil.  It has a low burn temperature, so it is added towards the middle or end of cooking, and it has a wonderful aroma.

  4. Considering that there's no standard recipe for fried rice, it's probably the family's own "fried rice sauce", pre-mixed in a squirt bottle to make it easier for cooking.

    You could ask what they put in it, but it's probably mixture of soy sauce, rice wine vinegar, ginger and garlic.

  6. i would say it's just dark soy sauce.

    usually garlic would be used to 'fragrant the wok' with the oil before putting in the ingredients. i dont think a lot of places put sesame oil in fried rice - not sure why but if they do it'd probably be done after.

  8. Here is the recipe that I have for fried rice.  Please keep in mind you can use whatever veggies that you want.  I would add some scallions to this as well.  I noticed that you have to make sure that you add the sesame oil or it doesn't taste as good.  Hope this helps you out:

    FRIED RICE

    1 medium Onion (minced)

    Sesame Oil

    Minced Garlic

    Bean Sprouts

    2 Cups of COLD COOKED White Rice

    Peas (frozen or fresh)

    2 Eggs (beaten)

    Corn (frozen or fresh)

    2 tbs. Soy Sauce (or more to taste)

    Pea Pods (frozen or Fresh)

    Peanut Oil

    Shrimp, chicken or Pork

    Cook onion and garlic in peanut oil for 10 minutes.  Add veggies, cook until tender.  Add rice.  In middle of pan add eggs and soy sauce (cook like you are making scrambled eggs).  Once cooked, mix in rice and veggies.  Sprinkle with sesame oil.

    BTW, you won't be able duplicate the taste of fried rice at home.  since you were there watching the cooking process, have you noticed how high the flame was?

    the secret of tasty stir fry is the high heat, you won't be able to generate that kind of heat from a house stove top.

  10. It's probably just dark soy sauce.  It's a little salty and smoky to give your fried rice the brown color and flavoring.  You can pick that up at any Chinese grocery store.
