Question:

Fried rice?

My boyfriend is Chinese and I'd like to make him fried rice. Does anyone know of some good recipes? I don't think it'd matter, but he is lactose intolerant. Thanks! :D

  1. Ingredients;

    Chinese sausage ( at asian food stores optional) cut into little chunks diagonally.

    Chicken or shrimp or any kind of meat you'd prefer cut into little chunks

    green onions, chopped

    Fresh garlic, about 2 tablespoons. ( I love extra garlic but you can adjust the amount accordingly)

    1 onion julienne

    4 eggs mixed up in bowl

    Frozen peas and carrots ( about 1 cup)

    2 cups of cooked steamed rice ( better if left overnight in the refrigerator)

    Dark soy sauce

    Salt

    Pepper

    sesame oil

    msg ( if you are using any but it's optional)

    Beansprouts (optional)

    Cabbage (optional)

    Procedure;

    First you heat up some oil in a wok or frying pan.

    Cook the chicken or what ever meat you are using in the pan.

    Add in the chinese sausage if you are using them.

    When the meat is almost done, add in the egg.

    Kinda break up the eggs

    Add in a little more oil if need to

    Next add in the garlic, green onions, onions, peas and carrots with the meat and egg mixture in the pan

    sauteed them all around for about a minute

    Add in the steamed rice, assuring that all the chunks are broken up using your hands.

    Mix it around the pan add in some water if the rice is too hard from being left over night in the fridge ( about 2 tablespoons)

    Add in about 2 teaspoons of dark soy sauce ( or till desired darkness of the rice)  Making sure to mix around good or else the color would be uneven.

    Add in salt, pepper to taste.  Add in the msg if desired (about 1/2 teaspoon)

    Last but not least add in the beansprouts, and cabbage if using any and mix well

    Finally add in about 2 teaspoons of sesame oil

    Stir well and serve.

  2. there is good recipes for this kind of thing on the william sonma website or the foodnetwork, i've tired several of them and they are all pretty good, just a tip make sure the rice is at room temp. or cold because if its hot when your stir fry it, it will clump up and tend not to work so well.

  3. For the best fried rice, use day-old rice.  It loses some moisture and doesn't clump, but also soaks up the soy sauce easier to get that distinctive color.

    Also, make sure you have a BIG pan, otherwise it will be all over the floor.

  4. Hey!  I'm  having that tonight!

    But instead of a recipe, think of fried rice (and Asian cooking in general) as a cooking technique.  

    I wonder if there are any videos you can watch?  It is so easy, and once you see how it's made, you'll understand the concept of it and never need a recipe again!

    Or if you have the opportunity, watch the chef very closely at Beni-Hana!  He starts out with scrambled eggs.  Then he sautees the scallions.  Then he stir fries the chopped meat and veggies, like shrimp, ham, chicken, pork, carrots, peas, etc.  Then when all the elements have been stir fried separately, the refrigerated day old rice is folded in.  Soy sauce is splashed over it to taste.  Use spatula or chan to keep folding until all the rice and other ingredients look like fried rice.

    make white rice

    wait for it to cool completely. put a little

    oil in a pan and and spoon the rice in.  then add whatever vegetables you like in yours and soy sause~ the vegies i add are peas cooked chopped carrots and onion but i know if you google it there are soooo many different ways to make it

  6. Be sure and use cold, cooked rice or it will be a gloppy mess.

Cook rice then let cool to room temperature.  Dice a small onion and add to rice along with shredded carrot.  Cook egg (1-4 depending on how much you like) and chop it into small pieces and add to rice.  In a wok or on a flat griddle melt approx 1/2 stick butter (not oil).  Sprinkle approx. 1/2 to 1 tsp. of garlic powder to butter. (Do not miss this step or the rice will not taste right.) Add rice.  Toss rice then add soy sauce to desired taste.  

    What really makes this good is adding cooked shrimp to the rice.

    My friends and family love this recipe!  I hope you do too!

  9. I'd ask his mom for her recipe.  

    But, here's a standard one.

    Scramble one or two eggs and set aside.

    In a wok or frying pan with 2 Tablespoons of oil, saute:   1/2 onion sliced,  1 large stalk celery sliced,  2 carrots (scraped and cut into match sticks), 1 clove minced garlic,  1 cup diced ham.

    When these veggies are just done.  Toss in 1 cup frozen peas and 1 cup frozen corn.

    When this is heated through add 2 cups (or more if you like) left over cooked rice and mix in the scrambled egg.

    Add soy sauce to your taste.  (Start with 2 tablespoons).

    Heat through and serve.

    Have all your veggies ready when you start because this recipe a short time to prepare.  10 minutes tops!
