Fried rice question?

I've just made fried rice, but it's WAY too gross and soggy and sticky (I've used sticky rice, but it is way overdone).

Is there any way for me to fix this? Please help! I have to have it finished by tomorrow morning!

  1. If you have already fried it its too late!

    I would start again, but get rice from a take out chinese place, and use that.


  2. Sorry, I don't have advice on how to fix this batch, but next time, don't use sticky rice, use regular long grain, jasmine, or basmati, and, most importantly:  chill the cooked rice before the mixing/frying.

  3. toss some hot steamed sticky rice (not too soft) with your soggy fried rice then try the taste.  

    Edit : 2 - if you have too much water in the wok/pan, drain out the sticky rice, clean your pan/wok, and start it over again by heating 2 tablespoons of peanut oil over high heat then add your sticky rice (with some hot steamed sticky rice-new) in the pan/wok.

    We (Cantonese) do fry sticky rice with chopped Chinese sauages, dried shrimps, dried shitake mushroom, dried scallops, then garnish with chopped green onions and it is a winter dish!!!!  

    Soak the sticky rice overnight, then steam till halfy cooked and fry with the ingredients and a few tablespoons of chicken stock, add salt and a tiny bit of sugar to taste.  (You have to stir fry the sauages, dried shrimps and dried scallops till fragrant add a bit of rice wine in wok before you add your sticky rice in wok and toss the sticky rice to combine with other ingredient over medium heat till rice fully cooked and puffy)

  4. Use long grain rice, such as Thai rice. Cook the rice and leave it overnight before frying it; somehow it makes tastier fried rice than using freshly cooked rice.

  5. When I make rice I add the rice to a little oil in a fry pan and stir over low heat until just a little golden brown.Then add your water and simmer.Don't over cook it.

  6. its very important to cook the rice one day before, or just use same leftovers!

    I like to do it with jasmin rice!

  7. Just bake it in the oven to dry out the moisture from the rice. Do not stir the rice anymore, you will only make it more gooey. Never use glutinous rice to make fried rice, try using basmanti rice or thai rice instead.

  8. I don't think there is a way to fix it, simply because you may have added too much water from the start. My only suggestion for the next time or try to buy pre-cook rice, which is easy to manage as you cook or try using less water.

  9. if you don't like your fried rice soggy and sticky you shouldn't have used sticky rice.  that is actually the only way i like fried rice because i only like sticky rice.  i don't really like the fried rice from restaurants...cut i'll eat it.  i made a whole pot of fried rice for lunch today...yummy...it's my favorite and we eat it for breakfast, lunch or dinner.  it's just a whole meal in one pot cooked at one time for us.  we're from hawaii.  as far as fixing it...you can't.  since you already tried and didn't make it the way you wanted to maybe you should go but some from your favorite restaurant.  it wont be as cheap as making your own but it will be to your liking.  good luck and aloha!!

  10. Sticky rice is not the rice to use for nice fried rice. Use

    Basmanti ( middle eastern buttery yummy rice) But sice you did, I am assuming it is too gummy. If you have not added it to your ingredients, continue to cook it on a high heat to burn off the excess water. Then add it to your stir fry. OK so if you have already tried to add it to your ingredients in a stir fry and the rice is still gummy, keep your heat high to burn off the excess water and "gum". Since your green onions and other veg will overcook, add some more green onion etc to add freshness, AFTER you have cooked your rice some more. Great chefs ALL make mistakes, it is the matter of knowing how fix your mistakes, that makes you great! smile. Every chef knows how tho fix their mistakes. You can too, and make your dish come out awesome not matter what!

  11. There is absolutely NO WAY to fix badly fried rice. Next time use a fragrant Thai variety, OR buy boiled plain white rice from Chinese restaurants/takeover to save time and effort. In fact to fry rice it is always better to use rice boiled several hours before even yesterday rice would be fine. Of course, the rice should be appropriately boiled with just the right amount of water, not "too soft or fluffy".

    Since nearly all ingredients used in Chinese fried rice are pre-cooked, the actual frying in the wok is very quick with near continuous stirring or tossing of the wok - trick is to disallow the rice++ to remain in one spot for 'too long'.

  12. 1st, u can't use sticky rice to do fried rice. just normal rice wil do. 2nd, u hv to cook the rice 1st n put it into the fridge overnite so to make it more dry b4 u can cook it. it's a technic 4 making gd fried rice. so b4 u doing ur fried rice. prepare 3 things probably. 1. ur fridged rice, 2. things that u wanna cook w/ ur rice, 3. eggs.

    example..... if ur no.2 = some chicken meat.......just season it 1st n cook it b4 u start to fried ur rice.

    then....... pour oil...... in go rice, fried it quick until oil wrapped it all over n the rice seem can pop a bit in ur wok. then in go cooked meat....... mixed them well. finally eggs..... fried quick again so to let ur eggs wrapped @ rice. then done!
