  1. Winter is normally a quieter time in Tasmania although visitation figures from last year show that there was an increase during the winter months - http://www.abc.net.au/news/stories/2007/...

There are noticeably less tourists about but that is not necessarily a bad thing, you are more likely to get a good deal with accommodation!  Some attractions and restaurants will reduce trading hours but these can normally be found out through the visitor's centres or by phoning ahead.

  2. Everything is usually a bit quieter in winter- as it is in most states.  However, this can mean that it is the best time to visit.  You will have less trouble finding accommodation and bookings for starters.  Also, some places in Tassie are at their best in winter.  The top of Mount Wellington is covered in snow and absolutely beautiful in the winter months.  Places like Cradle Mountain are also snow covered and absolutely stunning.  It is definitely a beautiful place to visit in the winter and although it might be cold, it is definitely a special place!
