How does it happen, what are the changes occuring for in the fruit.

  1. As apples mature two main changes occur which makes the apple flesh softer.  As it matures the juice content increases.  this lowers the apple solids content, thus the apple is softer.  This is highly correlated with an increase sugar content and a lower starch content which also makes the flesh softer.

    In other words as the apple mature it gets sweeter and juicer which in turn makes the flesh softer and delicious.


  2. An important plant hormone involved with ripening is ethylene, a gas created by plants from the amino acid methionine. Ethylene increases the intracellular levels of certain enzymes in fruit and fresh-cut products, which include:

    Amylase, which hydrolyzes starch to produce simple sugars, and

    Pectinase, which hydrolyzes pectin, a substance that keeps fruit hard.
