GWUMPKIES (STUFFED CABBAGE) WITH FAT BACK?

Question

OK... My boyfriend's family makes stuffed cabbage without rice or red gravy. They make them like tiny little meat loafs inside the cabbage, which is fine, but they use fat back to make a sauce. Can anyone help me as how I can accomplish this? Please, any ideas would be helpful, I have to do this Sunday 31-Aug-2008. Thank you
