Garlic white then blue then white again?

the garlic in my pickled peppers turned blue. about a week later they turned white, why is that? I already know why the garlic turned blue, I just need to know why the turned white again. Thanks!

Maybe there was something that reacted with the copper later or the reduction of the allicin by the vinegar killed the colour.
