In my experience I haven't found that to be true, the stereotype of the jolly fat person is a myth.

Some of it could be self-defense:  I'll make you laugh and then you'll see that I'm smart and cool

Some of it could be stereotyping:  you're just expecting fat people to be jolly, funny
