Why can't you construct a midpoint on a ray?

You can't get a midpoint if you don't have two endpoints to find the middle between.  A ray has only one endpoint and extends forever in the other direction.  Hence, no midpoint is possible.

which you can average, there is no midpoint

It goes onto infinity. Infinity has no midpoint since infinity is a concept-not a number.
