I just bought a cutest apron, have Madonna singing "like a virgin" and I realized that my oven is still a virgin since I never used it. I think its time!

Anyone has any simple delicious recipes to share? i'm thinking something ti bake something with fruit, like apples or pears. Something like a cake, but I don't like frosting of any kind.

I want the first time to be special! :D

    Apple Spice Snacking Cake

    1/3 cup butter (softened)

    1 cup granulated sugar

    3 eggs

    2 tsp vanilla

    2/3 cup unsweetened apple sauce

    3 1/2 cups flour

    1 tbsp baking powder

    2 tsp cinnamon

    1 tsp baking soda

    1 tsp ground ginger

    1/2 tsp salt

    1/2 tsp nutmeg

    1 1/4 cups milk

    2 cups chopped peeled apple

    Glaze:

    2/3 cup icing sugar

    1 tbsp lemon juice

    Preheat oven to 350 deg. F. Line 13x9 metal cake pan with foil and grease lightly. Using electric mixer beat butter with sugar until light and fluffy. Beat in eggs, one at a time, then vanilla and applesauce. In seperate bowl combine flour, baking powder, cinnamon, baking soda, ginger, salt and nutmeg. Stir into egg mixture alternately with milk. Stir in apples. Pour into pan and bake 35-40 minutes or until tester in center comes out clean. Let cool in pan on rack for 15 minutes. Invert pan and turn out cake. Remove foil. Turn right side up on rack and cool completely. In small bowl, whisk icing sugar and lemon juice until smooth. Using fork, drizzle over cake.

    Apple Streusel Coffee Cake

    1 1/2 cups flour

    2 tsp baking powder

    2 large eggs

    1/3 cup milk

    1 tsp vanilla

    1/2 cup sugar

    1/4 cup butter, softened

    1 large apple, peeled, cored and thinly sliced

    Streusel topping:

    3 tbsp flour

    3 tbsp powdered sugar

    1/2 tsp cinnamon

    2 tbsp butter, chilled

    Glaze:

    1 cup powdered sugar

    4 tsp or more water

    Preheat oven to 350 deg F. Grease 9 inch round cake pan. In small bowl combine flour and baking powder. Beat together eggs, milk, and vanilla in another small bowl. Combine butter and sugar in a large mixing bowl, beat with electric mixer on med. speed until creamy. Alternately add flour mixture and egg mixture beating well after each addition. End with flour mixture. Spread into prepared cake pan. Arrange apples on top gently pressing into batter. Bake for 20 minutes. While cake bakes, make streusel topping by combining flour, powdered sugar and cinnamon in a small bowl. Cut in remaining 2 tbsp butter until crumbly. Make glaze - mix together powdered sugar and enough water to form a smooth consistency that's just thin enough to drizzle. Sprinkle top of cake with topping. Bake 15-18 more minutes or until tests done. Cool in pan, drizzle with glaze.

  2. APPLE UPSIDE DOWN CAKE

    1 stick butter

    1 egg

    1/3 teaspoon baking powder

    1 cup sugar

    1 cup all purpose flour

    1 teaspoon almond flavoring

    1 1/2 cups apple (more or less)

    1 cup sugar

    1/2 teaspoon cinnamon

    Combine 1 cup sugar with 1/2 teaspoon cinnamon in a small bowl and set aside. (If more flavor is desired, sprinkle sugar with a drop of vanilla and a pinch of ginger before mixing.)

    Peel, core, and very coarsely chop 1 1/2 cups of apples. Green apples, such as Granny Smith should be used as they retain more of their shape, while other types of apples might turn to applesauce. Prepare enough chopped apple to cover the bottom of the pan you'll be using and have a layer of apples 1-2 inches thick.

    In a loaf pan or deep cake pan, bake the apples in a preheated 325F oven until soft. Remove from oven. Sprinkle the apples with the sugar and cinnamon mixture to coat well.

    In the bowl of an electric mixer, cream together butter, 1 cup sugar, 1 cup flour, 1 egg, 1/3 teaspoon baking powder and 1 teaspoon almond extract (vanilla may be substituted).

    Pour batter over apples and return pan to a preheated 350F oven. Bake until cake tests done.

    FRESH APPLE CAKE

    2 cups flour

    2 teaspoons baking soda

    2 cups apples, pared, cored and quartered

    1/4 cup Crisco

    1/4 cup butter, melted

    1 cup sugar

    1 teaspoon salt

    1 teaspoon cinnamon

    1 teaspoon vanilla extract or 1 tablespoon dark rum

    1/2 teaspoon nutmeg

    1/4 teaspoon ground ginger (or 1 teaspoon freshly grated)

    1/4 teaspoon ground cloves

    1 cup raisins

    1 1/4 cups whole pecans

    Preheat oven to 350F degrees.

    In the bowl of a food processor, process pecans very briefly by pulsing twice to leave nearly whole pieces. Add 1 cup peeled and cored apple pieces along with salt, sugar, vanilla, baking soda, cinnamon, nutmeg, ground cloves and ginger. Process briefly so that chunks remain. Add second cup of apples, processing one pulse only. This provides two different consistencies for the apples. Add raisins and melted butter. Pulse once.

    Add flour and process only until combined; some lumps will remain.

    Turn into a well greased and floured (or use Baker's Joy) 9x9x2 inch baking pan.

    Variation: May add up to 1/2 cup coarsely chopped apples and nuts to top before baking. Keep the layer of apples and nuts light so it won't stop cake from rising.

    Bake 40 to 50 minutes or until a toothpick inserted in center comes out clean.

    Serve with whipped cream flavored with a little vanilla or rum and a sprinkling of cinnamon sugar.

    PEAR TORTE CAKE

    1 can pears

    1/3 tsp. baking soda

    3 eggs

    1/2 c. sour cream

    1 pkg. yellow cake mix

    Mix the following ingredients together and set aside: 3/4 c. sugar 1 tbsp. cinnamon

    Drain pears, saving 2/3 cup of the juice. Place pears, juice, sour cream and baking soda in blender. Blend until smooth. Place cake mix and pear mixture in bowl. Beat until smooth. Add eggs one at a time, beat smooth after each egg.

    Heavily grease Bundt pan. Coat with some of the sugar, cinnamon and nut mixture. Layer cake mixture and remaining sugar mixture in Bundt pan at least 3 times.

    Bake at 350 degrees for 40-50 minutes or until done. Cool for at least 30 minutes in pan. Turn onto plate or cake dish.

  3. Hi there! Sounds like fun! I absolutely love to bake! :)

    If you want to try something simple...this one is a keeper! LOL!

    just take 1 can of peaches and one box of yellow cake mix (plus whatever the cake mix calls for)....use a 13x9 inch baking pan and grease like you would for a cake (Pam works for me - lol). Follow the directions for the cake mix and pour cake batter into pan. Take your can of peaches and pour right over top of your cake batter (try to distribute evenly across the length and width of the cake pan)...follow cake mix directions for baking temp and time....tad-ah! You have an easy and yummy peach cobbler! It is sooo good that no one will ever realize it was a cake mix - lol -   ;)

    Enjoy your day of baking! I don't start my baking tributes until closer to Halloween....and then it's hard to stop me until well after Easter! LOL!

    If you like you can even add a little brown sugar sprinkled over the top of your cobbler before baking....so good!

    I also use this when in a bind for a quick yummy desert and it works really well with blackberries too! (minus the brown sugar)

    Apple Blossom Bundt Cake

    1 1/2 cups vegetable oil

    1 1/2 cups granulated sugar

    3 eggs

    3 cups all−purpose flour

    1 1/2 teaspoons baking soda

    1 teaspoon salt

    1/2 teaspoon cinnamon

    1/2 teaspoon ground cloves

    1/2 teaspoon nutmeg

    1 teaspoon vanilla extract

    3 cups apples, unpeeled and chopped

    1/2 cup walnuts or pecans, chopped

    Preheat oven to 325 degrees F. Use solid vegetable shortening to generously grease a Bundt baking pan.

    Cream oil and sugar together. Add eggs, one at a time, beating well. Sift dry ingredients and spices

    together. Add to sugar mixture. Add vanilla extract, apples and nuts to batter and fold all together.

    Bake in prepared Bundt pan for 1 hour and 15 minutes. Cool 20 minutes before removing from pan.

    Serve warm or cool without icing.
