I've been to Cancun several times and the last three times I have stayed at the Riu Palace Las Americas.  It'a an all inclusive resort and super nice.  The staff is friendly and helpful and the rooms are extremely roomy and clean.  It's romantic, it's in a great location to all the bars and restuarants and shopping.  It is without a doubt my favorite resort in Cancun--trust me, you'll love it if you go!
