  1. Roat pork tenderloin with a rhubarb/currant/cherry chutney. Couscous and your favorite veggi. Very good, lite and healthy.


  2. grill up your fave meat. mine is tuna, my hubby is stake, my son is chicken. then thinly slice and put on a bed of ready mixed greens. a little dressing and you have dinner. add croutons and shredded cheese for a complete meal. really Little clean up too!!!

  6. BARBEQUE BEEF CASSEROLE

    INGREDIENTS

    2 pounds ground beef

    1 large onion, diced

    1 green bell pepper, seeded and diced

    1 (10 ounce) can whole kernel corn, drained

    1/2 cup barbeque sauce

    1 (14.5 ounce) can diced tomatoes, drained

    3 (8.5 ounce) packages corn bread mix

    DIRECTIONS

    Preheat the oven to 400 degrees F (200 degrees C).

    Crumble the ground beef into a large skillet over medium-high heat. Cook until evenly browned. Add the onion, bell pepper, corn and tomatoes. Cook and stir until vegetables are tender. Drain excess grease, and stir in the barbeque sauce. Spread the beef mixture in an even layer in a 9x13 inch baking dish.

    Prepare the cornbread batter mixes according to package directions. Spread the batter over the top of the beef mixture.

    Bake for 20 to 25 minutes in the preheated oven, until the top is golden brown, and a knife inserted into the center of the cornbread layer comes out clean.

  9. chicken cordon bleu

    4 skinless, boneless chicken breast halves

    1/4 teaspoon salt

    1/8 teaspoon ground black pepper

    6 slices Swiss cheese

    4 slices cooked ham

    1/2 cup seasoned bread crumbs

    Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.

    Pound chicken b*****s to 1/4 inch thickness.

    Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.

    Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.
