If the theory is correct, that a species will evolve certain benefitial heritable traits while shedding those features that become obsolete to survival within a changing environment, than why don't women find bald guys more attractive?

Attractive features has more to do with symmetry in physical development rather than how much hair a person has.

Hair is like being a peacock, you will attract more mates with plumage. A featherless peacock will not attract many hens.Also they can't run their fingers though bald.
