Gluten free vegan food easy to prepare?

Ok, day 12 of this vegan, gluten free diet and I am hungry! I have been having alot of rice and vegetables and fruit. What else can I have? I have been a vegetarian for 13 years and thought it was hard to find stuff to eat that way, now with no dairy or gluten I am having a very very tough time finding things to eat, though I do feel better. Any suggestions?

  1. Do you like Indian food?

    South Indian food is mostly vegan if you omit eggs, ghee, and yogurt (which aren't required for good south indian fare). It is also mostly gluten free (you just can't have the chappati's).

I can tell you what I know...I learned a lot of what I know from my mother in law, and I have the name of a decent book that has pictures of the food and lots of recipes that you can tweak to fit your taste. The only thing is, having access to an indian grocery store would help a LOT!!


  2. [Just a point, contrary to what someone has said, you canNOT eat rye or barley if you are avoiding gluten. These grains are all off limits: wheat, rye, barley, spelt and triticale.]

    Well, you can eat potatoes in their skins with all sorts of stuff, lentils and beans of all kinds - a really nice bean stew with lots of different beans and tomatoes would be good with the potato. Then there are nuts, millet, quinoa, rice of course, quorn (mycoprotein), and dried fruit makes good snacks - i love tropical mix, it's called trail mix nowadays.

    Try Asian stores for all sorts of interesting snacks based on rice or chick pea (garbanzo bean) flour. They are usually hot and spicey, though, so hope you like that,

    Don't eat too much soy, which is tempting, because there are problems. They just did a study that showed high intake of soya caused memory problems, and also it has an estrogenic effect, can s***w up your hormones.

    I hope you are watching your protein intake, because it's not at all easy getting enough protein if you cut out all animal-derived products, including eggs and cheese. You need to combine whole grains and legumes (lentils, peas, beans) to get a whole protein. You do need at least some protein every day.

    Also you will be missing out on B vitamins unless you include yeast in the diet somewhere. Until you have got used to this regime, you would be best taking a good multivitamin and mineral supplement every day.

  3. Please ignore Renee's comment that you can eat Rye, barley, etc. I am assuming that you have a gluten intolerance; gluten is present in wheat, rye, barley, and triticale. In addition to rice, you may want to try adding in polenta, grits, and potatoes to your diet. You should also increase you caloric intake. If you are hungry for more than 30 minutes take it as a sign you need to eat. You can also try adding in more beans and legume based products to increase your protein intake (e.g. hummus).     If you can eat soy, make sure your miso is gluten free. Some of it is grown on a wheat medium. Just search your brand + gluten.

    You are hungry because dairy free has cut off your protein and your bod is giving you signals to keep eating trying to get enough protein. Also, make sure you are getting enough fat. Olive oil is the best, but you can have vegetable and canola oil. Try eating hummus,stirfry you make yourself,or even eggs if you allow them, salad dressing.

  5. Beans are loaded with fiber and gluten free.  They certainly fill you up.  Have you tried quinoa?  They even make a quinoa pasta.

  6. I'm assuming your alergic to gluten, that would be the only reason to avoid eating wheat protein. You can eat, rhy, barley, oats, rice, just stay away from wheat. Use soy products in place of dairy.

  7. I was not aware that being a vegan meant swearing off gluten. Any word on this?
