Going to Brittany, France !!! Whats the best port to travel from and to there ?

Depends on your travel when you are there.  The western routes land you there or thereabouts.  But from Essex you would have to drive a distance to the UK western ports.  You may as well drive in France.  So, if by car I'd take one of the cheaper, quicker and more frequent crossings - Dover to Boulogne (Speedferries) or Dunkirk (Norfolk Line).  You can still get from home to Brittany in a day.
