Cancun Palace is one I'd recommend. You can then visit any Palace resort in the area and have free access to all their amenties too! Here's a good list of options for you.

We also like Fiesta Americana Grand Coral Beach located at the top of the hotel zone. This resort is not all-inclusive.

if price is not an issue for you, i have stayed at the royal sands twice

great food, great rooms, great pool, great beach

the royal sands is very nice. I have also stayed at the Grand Oasis... i think its called that. anyways, both of these are really nice!

A nice and kind of affordable hotel is NH Krystal which is located at the tip of the coastal line just about to turn northwest. The beach is allright nad the service is good. Costs like $150 per night.
