Good Breakfast For Mom?

ok so i know how to cook and all that stuff. and its my mom's birthday so my brother and sister and i want to make a good breakfast for her to let her know that we appreciate everything she does for us and how she takes care of us (since we don't have a dad) so what would be something good to make her :)?

can you please add the recipes also? pretty please? we want it to be very special!

  2. Elegant eggs Benedict makes a wonderful special breakfast or brunch.



    Ingredients:

    1/2 cup butter

    2 egg yolks

    1 teaspoon fresh lemon juice

    1/4 cup boiling water

    dash salt

    dash ground cayenne pepper

    3 tomatoes, ends removed and halved

    12 thin slices cooked ham

    6 eggs

    6 English muffins, split, toasted, and buttered

    Preparation:

    Eggs Benedict. In the top of a double boiler, whisk egg yolks and lemon juice together. Add 1/3 of the butter, about 3 tablespoons. Place double boiler over simmering water. Cook, beating constantly, until butter melts and sauce begins to thicken. Add 3 more tablespoons of butter, stir until butter melts, then add remaining 2 tablespoons of butter. Slowly whisk in boiling water. Continue cooking over simmering water, stirring, until mixture thickens, about 2 to 3 minutes. Remove from heat; stir in salt and cayenne pepper.

    Place ham slices and tomato halves on rack of broiler pan. Broil 4 inches from heat for about 4 minutes, or until ham begins to get browned and tomatoes are cooked through.

    While ham is broiling, pour about 2 inches of water into a large skillet. Lightly salt water; bring to the boiling point. Carefully put eggs in water, breaking into a cup first, then gently slipping them into the water one at a time.

    Simmer eggs, while basting with the water, for 3 to 5 minutes or until set. Remove with slotted spoon; drain.

    On warm serving plates, place English muffins, 2 halves to each plate. Top halves with 2 slices of ham and a poached egg. Spoon a little sauce over the egg and place a thick slice of boiled tomato next to the egg.

    Recipe for eggs benedict serves 6.

    Ingredients:

    6 ripe but firm pears

    2 medium navel oranges, unpeeled, sliced

    1/4 to 1/2 cup raisins

    3/4 cup brown sugar, packed

    1 cup water

    dash salt

    3 tablespoons butter

    Preparation:

    Cut a thin slice off bottom of each pear so they will stand up. Place pears, orange slices, and raisins in a 3-quart baking dish. Combine brown sugar, water, and salt; pour over the fruits, covering orange slices well. Dot with butter. Bake, covered, at 325°, for 1 to 1 1/2 hours, basting fruit occasionally. Serve warm. Serves 6 to 8.

    cantaloupe Shake recipe.

    Ingredients:

    1 cup whole strawberries, hulled and washed

    1 cup diced cantaloupe

    2 to 3 teaspoons granulated sugar

    1/2 cup skim milk or low fat milk

    Preparation:

    Place all ingredients in food processor or blender and process until frothy; serve immediately. Makes 2 cantaloupe strawberry shakes.

Coddled  Eggs, Toast with REAL butter, OJ ( and if on a weekend and she does not have to work, and if she drinks alcohol, add some champagne- you can buy small bottles, have a neighbor or friend buy it if you are not old enough, explaining what it is for of course!) Her favorite coffee with real half and half, and her favorite flowers on the table. Use the best plates and silverware you have, a cloth napkin, and serve it on a tray while she is still in the bed ( hint- a fun thing is to find a china setting and silverware, crystal glasses, cloth napkins, at a thrift shop- easy and cheap and goes to charity. Look for a church thrift shop in your area) Another great idea is to snap photos of you all making her breakfast and presenting those to her that night- so one hour or print yourself, she will love it, trust me.

    Coddled Eggs

    A gentle cooking technique, coddling produces soft-cooked eggs. They can be prepared simply, seasoned with salt and pepper, or embellished with cooked diced bacon or ham, cheese, and chopped scallions or fresh herbs, as we’ve done in this recipe. A bit of cream enriches the dish.

    Ingredients:

    2 Tbs. plus 2 tsp. unsalted butter, at room

    temperature

    8 eggs

    4 tsp. heavy cream

    1/4 cup cooked diced bacon

    1/4 cup crumbled goat cheese (chèvre) or

    other cheese

    4 tsp. scallions, thinly sliced diagonally

    Salt and freshly cracked five pepper blend,

    to taste

    Toast for serving

    Directions:

    Preheat an oven to 350°F. Have a pot of boiling water ready.

    Butter the bottoms and sides of four 5.4-fl.-oz. Apilco ramekins with the 2 Tbs. butter. Put 1/2 tsp. butter in the bottom of each one. Break 2 eggs into each ramekin, then top each with 1 tsp. cream, one-fourth of the bacon and cheese, and 1 tsp. scallions. Season with salt and pepper. Cover the ramekins tightly with aluminum foil.

    Place the ramekins in a baking dish and add boiling water to fill the pan halfway up the sides of the ramekins. Bake until the whites are just set and the yolks are runny, 18 to 22 minutes; for set whites and hard yolks, bake for 22 to 30 minutes.

    Remove the ramekins from the baking dish and remove the foil. Serve immediately with toast. Serves 4.


  4. How to make a breakfast burrito

    Take two eggs and crack them into a microwave safe bowl. Take a whisk or spoon and beat the eggs until they are properly mixed.

    Finely dice some ingredients of your choice: green peppers, onions, cooked potatoes, cheese, chilies, ham and/or bacon. Sausage works well too.

    Add the diced ingredients into the bowl. Add milk or half and half to give the egg a more fluffy texture, water works, too. Mix everything again.

    Microwave the bowl for approximately three minutes. Cooking times will vary so check once the egg starts to rise. Do not overcook.

    Take a tortilla of your choice and set it down flat on a plate. At this point add a touch of salsa to give it more of a 'mexican' flavor as well as american cheese. However, this is all up to your taste.

    Once the egg is done, scramble it up in the bowl and put contents into the tortilla.

    Wrap both sides of the tortilla inward and then roll it up from the bottom. This should 'seal' both sides and allow for easy eating. Enjoy!

    Tips

    Be creative and experiment with the ingredients

    Add some oregano, salsas, black olives, avocado or your favorite spice for added zest.

    Try frying up some hashbrowns and adding them to your burrito!

    Try dicing your potatoes, onions, peppers, etc, frying them, then when they are done add your eggs, scramble, cook until done then roll up in tortillas

    Warnings

    Don't add too much milk/cream as this will not allow the egg to properly cook

    Remove the dish from the microwave carefully.
