  2. I don't have any super fancy or complicated recipes for you here. But, I really enjoy a Tofu dog in a whole wheat bun, with some soy cheese melted on the bun. Its like a cheese dog, but in vegetarian form. You can add condiments to it to make it a chilli cheese dog, or a pizza dog, or whatever.

    I also enjoy canned chickpeas mixed in with a salad, with some sort of balsamic or vinigerette dressing. Be creative with the salad, add some walnuts into it or some almonds, different kinds of veggies, etc. To get a better complete protein add in some tofu to the salad. Oh and don't forget the bread at the side :]

    For dinner, I usually make things that don't require a recipe... like mac & cheese with soy cheese, or a hoagie with Tofurkey Deli Slices and Vegenaise vegan mayo.

  5. Breakfast:

    This is one of the first recipes I made when I went vegan and it's really good.  If you didn't know already...for the tofu you should use firm or extra firm (not silken).  Drain the water from the package and squeeze out excess liquid.  Then wrap the tofu block in several paper towels or kitchen towels and rest on counter.  Put several plates or a pot with a couple cans of beans inside to put weight on the tofu.  Leave to press for around 30 minutes. This will get extra liquid out of the tofu, making it cook faster and making it more firm.

    Scrambled tofu:

    16-ounce block firm tofu

    3 cloves garlic, peeled and sliced thin (about 1 1/2 tablespoons)

    3 tablespoons diced red bell pepper

    2 tablespoons olive oil

    1/2 teaspoon turmeric

    1/2 teaspoon salt

    1/4 teaspoon freshly ground black pepper

    3/4 cup sliced green onions, scallions, chives or 1/2 cup minced onion

    2 teaspoons soy sauce

    Fresh salsa  

    Corn tortillas

    Drain the tofu and crumble it, using clean hands. Sauté the garlic and diced pepper with the olive oil in a medium sauté pan on medium heat, for about 2 minutes. Stir in the crumbled tofu first, then add turmeric, salt, pepper, green onions (scallions, chives or onions) and soy sauce. Cook the tofu for 3 more minutes, stirring occasionally. Serve with salsa and warm corn tortillas.

    Dinner:

    Curried Split Pea Soup



    This is a nice and simple yet flavorful soup. Serve it as an entree with some jasmine rice or as the perfect starter to an Indian meal. You will be suprised and relieved at how easy it is to prepare.

    Ingredients

    16 oz dried split peas

    1 Tablespoon olive oil

    1 medium white onion, diced small

    2 tablespoons fresh ginger, minced

    3 cloves garlic, minced

    8 cups water

    1 carrot to grate in at the end (optional)

    Spice blend

    2 teaspoons curry powder

    1 teaspoon ground cumin

    1/4 teaspoon ground coriander

    1/4 teaspoon ground cardamom

    2 teaspoons salt

    generous pinch cinnamon

    Directions

    Saute the onions in the olive oil at medium heat for about 5 minutes. Add garlic, ginger and spices. Saute 2 more minutes.

    Add the water and stir well. Add the splitpeas. Cover and bring to a boil.

    Bring heat back down to medium, let soup simmer for about an hour, until peas are tender. Grate in the carrot and serve. You can garnish with fresh cilantro if you have it on hand.

    Healthy vegan breakfast ideas would be muesli with soy milk, some fruit and a soy yogurt. Or maybe a fortified breakfast cereal, wholegrain toast with peanut butter.
