Good Zucchini squash recipes?

I have some BIG Zucchini squash....like have easy recipes that does not involve making breads or cakes!

  1. Try is sliced and grilled. You can cook i tin a skillet and add it to some pasta tossed with olive oil, herbs, cheese and other veggies. You can slice it like french fries, fry, and serve with marinara sauce. Add to a stir fry, soups, casseroles.  


  2. Soup and it's easy.

    fry some onions

    add zucc's

    good stock ( chicken or veg)

    cumin salt pepper

    simmer for 10 mins or until soft

    Put all in a blender and add milk to enrich the flavour.

    It's so good cold or hot. add crusty bread or croutons and you have a meal.

  3. My family and I love zucchini on the grill.  You can cut them into cubes (on skews) or thick slices to just lay on the grill.  Drizzle olive oil over them with salt and pepper if you like.

  5. Have you tried soup? Chop it all up with some onions and any other veggies you like or have handy-- really, anything, from lettuce to carrots to brussels sprouts--, season it with salt and pepper to your taste, and sauté in olive oil until it's soft. Then add stock (from a cube is just fine) or water. If you want a chunky soup, take out some of the bits and set them aside; if you don't, don't. Add some milk or cream while it's still relatively cool (very hot stuff can do weird things to milk. Best to add it at a lower temperature. If you don't like milk or cream, just leave it out). Add any herbs or spices you like. Whizz it up with a hand blender/blender/food processor/masher/whatever you have (and then put back the bits, if you reserves some). It'll be delicious as a soup, or you can use it as a base for sauces, casseroles, pasta salads, all manner of whatnot. It freezes excellently well.

  6. A favorite this time of year- slice zuchinni into about 3/4 inch rounds. Spread mayo on both sides and then place on a plate of breadcrumbs, pressing the breadcumbs in to coat as much as possible. Spray cooking oil on a baking sheet and place breaded zuchinni on the sheet. Spray the tops with a bit more oil. Bake in a 350 degree oven for 30 minutes.

    There are good as a side dish , served with ranch dressing, or topped with spaghetti sauce.

    I personally love them cooked in a rich sun-dried tomato sauce (can buy in a jar or make a rich tomato/garlic sauce yourself) but have resorted to freezing them in small batches with a view to having them throughout the winter as I have grown too many.
