  1. Ingredients

    450g/16oz lean beef mince

    2 garlic cloves, crushed

    1 tsp tomato ketchup

    1 tsp mustard

    1 egg, lightly beaten

    1 red chilli, finely chopped

    1 small onion, finely diced

    2 spring onions, sliced

    handful basil leaves, chopped

    olive oil for frying

    Method

    1. In a large bowl mix together the mince, garlic, tomato ketchup, mustard, egg, chilli and onion.

    2. Dive in with your hands and mix until the ingredients are well blended.

    3. Just before cooking, add the spring onions and basil to the mixture and divide into four patties.

    4. Heat a little olive oil in a large non-stick frying pan and fry the burgers.

    5. Turn them once only, cooking for about 5-6 minutes each side. (Alternatively you can cook them under a grill for the same time turning half way through.)

    6. Serve with burger buns and salad

    You could also add a bit of grated cheese in with the mixture!!! Dont forget to put extra fried onion tomato, lettuce cheese, maybe bacon and sauce of your choice in with the burger and bun like, chilli, bbq, red or brown..... what evr you fancy really!

  2. Hobo Hamburgers

    I'm not sure why these are called hobo hamburgers because they're more like little meatloaves. Whatever you call them, they're good though!

    1 pound ground beef

    1 egg

    3/4 cup bread crumbs

    1/4 cup lemon juice

    2 tsp Paula Deen's house seasoning OR 1 tsp salt, 1/4 tsp garlic powder, 1/4 tsp pepper

    1/4 cup chopped green (or red) pepper, optional

    1 cup grated Cheddar cheese

    2 Russet potatoes, peeled and sliced

    2 carrots, peeled, cut in half, then sliced lengthwise

    1 large slice of onion for whoever likes onion

    4 slices bacon, cut in half, optional

    Mix the beef, egg, bread crumbs, lemon juice, seasonings, pepper, and cheese.

    Tear some foil pieces large enough to fold in half, but the burger on, then wrap tightly and seal. Shape 4 patties and place one on each piece of foil. Place onion, potato and carrot slices on top. Top with 2 pieces of bacon. Wrap the foil tightly around the meat and vegetables. I like to bring two pieces up to the top and fold down a few times to create a nice seal, then roll the side pieces up.

    Bake at 350 for 45 minutes or cook over coals.

  4. Americano Spicy Burgers

    Ingredients

    450 g (1 lb) minced beef or pork

    2 tbs tomato purée

    1 packet Schwartz New Generation Americano Spicy Meatballs Recipe Mix

    2 tsp olive oil

      

    Preparation



    Place the minced beef or pork in a large bowl. Squeeze in the tomato purée and sprinkle in the packet contents.  



    Using your hands, mix thoroughly and then mould into 4 large burgers.  



    Brush each burger with a little oil and cook under a pre-heated grill for 10-15 minutes, or until cooked through, turning half-way through.

    Also great on the BBQ. Delicious served in sesame buns with lettuce and tomato.

  5. *Spicy Burger Bake---"(Very good, spicy "hot") Serve with salad, good quality bread and dessert."

    2 T canola or olive oil

    1 c chopped onion

    1 c chopped red pepper

    4-5 garlic cloves mince(chop very fine)

    8 T chopped Jalapeno peppers, (or to taste, split and seeded)

    2 lb. extra lean ground beef

    2 c crushed tomatoes (Heinz or Hunts)

    4 t chili powder (more if you like it really hot)

    3 T chopped FRESH parsley

    1 t salt

    4 thinly sliced potatoes (or grated to speed baking)

    4-6 oz shredded SHARP cheddar cheese

    Preheat oven to 425š. Using a non stick fry pan, heat 1 T oil over high heat.Add onion, red pepper, Jalapeno pepper and garlic. Sauté until softened. Add ground beef and cook, stirring occasionally and breaking up meat until ground beef is browned. Add crushed tomatoes, chili powder, parsley and salt. Stir well to combine. Cook 2 - 3 minutes.

    Spray casserole dish with Pan or other spray oil. Spread mixture evenly in casserole. Top with sliced potatoes. Brush lightly with remaining oil.Bake until potatoes are tender and lightly browned (34 - 40 minutes). Sprinkle with grated cheese. Bake until cheese melts and starts to bubble. (2 - 3 minutes)

    *Bacon And Double Cheeseburger Loaf

    4      slices        bacon

       1 1/2  pounds        lean ground chuck or ground round

       1      cup           firm fresh white bread crumbs

       1      cup           coarsely shredded sharp cheddar cheese -- (about 4

       1      ounce         )

       1      large         sweet onion -- such as vidalia,

                            -- chopped

       2      tablespoons   regular or low-far mayonnaise

       2      tablespoons   india or other sweet pickle relish

       2      teaspoons     dry mustard

         3/4  teaspoon      salt

         1/2  teaspoon      freshly ground pepper

       1                    egg

         1/4  cup           ketchup

    Preheat the oven to 350 degrees F. In a medium skillet, cook the bacon over medium heat until it is limp and some of the fat is rendered, 3 to 4 minutes. Remove the bacon from the skillet and reserve it.In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, 1/2 cup of the cheese, onion, mayonnaise, relish, mustard, salt, pepper and egg. Pat the mixture into a shallow 2-quart baking pan. Spread the top of the loaf with the ketchup, then lay the bacon strips over the ketchup. Bake until the loaf is firm and the bacon is crisp, 45 to 50 minutes, sprinkling the top of the loaf with the remaining 1/2 cup cheese to melt during the last 5 to 10 minutes of baking. Internal temperature should be 155 degrees. Let the meatloaf stand in the baking dish for 10 minutes, then cut into squares to serve. Leftovers Reheat slices in a microwave and serve on sesame buns with lettuce, tomato and ketchup.



    *Moroccan Burgers---These Moroccan Burgers are full of eastern spices that aren’t too spicy for those who don’t like hot food.

         1 pound ground beef or lamb

         1/4 teaspoon ground cumin

         1/4 teaspoon ground cinnamon

         1/4 teaspoon ground coriander seeds

         salt and pepper to taste

         2 gloves of garlic, minced

         2 tablespoons of chopped cilantro

         4 burger buns

    Combine the beef with the rest of the ingredients and make sure the chopped cilantro is distributed evenly. If you have time, allow the mixture to rest for 1-3 hours in the refrigerator.Shape the beef mixture into 4 patties and Broil/Grill/Fry each burger for 4 minutes on each side or until the meat is fully cooked.Serve on toasted burger buns with lots of salad and mint yogurt.

    * Grilled Spicy Lamb Burgers

           1 pound ground lamb

         2 tablespoons chopped fresh mint leaves

         2 tablespoons chopped fresh cilantro

         2 tablespoons chopped fresh oregano

         1 tablespoon garlic, chopped

         1 teaspoon sherry

         1 teaspoon white wine vinegar

         1 teaspoon molasses

         1 teaspoon ground cumin

         1/4 teaspoon ground allspice

         1/2 teaspoon red pepper flakes

         1/2 teaspoon salt

         1/2 teaspoon ground black pepper

         4 pita bread rounds

         4 ounces feta cheese, crumbled

      Preheat grill for medium heat.Place the lamb in a large bowl, and mix with the mint, cilantro, oregano, garlic, sherry, vinegar, and molasses. Season with cumin, allspice, red pepper flakes, salt, and black pepper, and mix well. Shape into 4 patties.Brush grill grate with oil. Grill burgers 5 minutes on each side, or until well done. Heat the pita pocket briefly on the grill. Serve burgers wrapped in pitas with feta cheese.

    *Spicy Sausage Burgers--These burgers can really pack some heat depending on how spicy your choice of pork sausages is. Adding pork to the usual ground beef recipe really gives these burgers another dimension.
