Good cake recipe for a 3 tier cake?

I am making a 3 tier cake and need to find a recipe for a nice sturdy cake. Also, I am planning on filling the layers and I'm nervous about it soaking through the layers if the cake is not dense enough. Any advice is appreciated!

  1. I have a great recipe for a chocolate wedding cake with gorgeous chocolate icing. It was in the sainsbury's magazine and is by Lorna Wing- party caterer to the stars.

    6 inch cake (and then scale up ingredients accordingly)

    225g luxury plain chocolate

    1 large egg

    4 large eggs separated

    175g caster sugar

    110g ground almonds

    1 tbs finely ground coffee

    cook 170oC

    Method

    Melt chocolate.

    Put whole egg and sugar in bowl and mix til creamy then quickly add chocolate, almonds & coffee.

    In clean bowl beat egg whites til stiff. Fold 1tbsp of egg whites to mixture to loosen then fold in rest. Put in cake tin and cover with baking parchent. Bake for approx 1hr (larger cakes will take longer).

    ICING

    500g dark chocolate

    250g butter

    apricot jam

    melt butter & chocolate together (this is the icing).

    Melt small amount of jam and brush over cake.

    pour over thin layer of icing and spread smooth with palette knife. Cool on frige and repeat to give a lovely smooth surface.

    Later all cakes on top of each other  and decorate around the edges with flowers.

    It look stunning

    It's moist enough that your filling won't soak through.

    It doesn't really matter how sturdy the cake is, the dowels support the plates, even in a stacked cake.
