things they want/need like small tool kits, board games, drinking games (tic tac toe shot glasses, martini mixer), comfy sweatpants, nalgene stuffed with candy/gum, posters, plants, coffee maker, etc.

Ask the person what he/she needs - I always appreciate a gift that is thoughtful and useful (and that doesn't have to mean expensive!).

Or take him/her out for dinner - that's a lovely gift (and something college students can't necessarily afford to do on their own). :)
