Question:

Good recipes for any type of bite-sized cookie??

and does anyone know how to make sure the edges are crispy, but the middle is soft? thanks!

  1. any cookie recipe will work if you use a small ice cream scoop, also after you cool the cookies place them in a zip lock back with a slice of bread to keep them soft


  2. go out and buy some cookies. easy and cheap. Buying cookies would be cheaper than buying ingredients and making them from scratch.

  3. Darn you're making me want a cookie. Whenever people talk about cookies I want one. When it's something else I could sometimes pass.

    Anyway, for bite sized, oatmeal raisin sounds good.

    And I don't know how to make the edges more crispy. I'm guessing to make the edges thiner than the middle so they'll cook through faster. Look it up in a cook book or something =-P

  4. 1.BITE - SIZE COOKIES (LOW CALORIE)

    1 1/2 tsp. liquid sweetener

    1 1/2 tsp. baking powder

    2 eggs, beaten

    1/3 c. dates

    1/4 c. flour

    1/2 c. chopped nuts

    1 1/2 c. bread crumbs

    Preheat oven to 350 degrees. Mix sweetener and baking powder. Add eggs and blend. Add flour, dates, nuts and crumbs. Mix well. Refrigerate 1/2 hour. Drop on greased cookie sheet and bake 10 minutes.

  5. Instant Pudding Biscuits.

    175g butter

    3 tbsp cornflour

    1 egg

    1 pkt Instant Pudding

    1 cup sugar

    1 3/4 cup flour

    1 tsp baking powder

    Cream all together really well

    Roll into balls

    Flatten slightly with a fork

    Bake 15 mins at 300f.

    As far as the texture you would like, that will be a temperature adjustment, have a trial and adjust accordingly.

  6. Cake Mix cookies

    1 (18.75-18.9 oz)box of cake mix, your choice of flavor

    2 eggs

    1/2 c. oil

    Mix all ingredients. Roll into small balls(bite size). Bake on ungreased cookie sheet at 350 degrees for 4-10 minutes(removing from oven when tops start to wrinkle always gives me good results). After 3-5 mins on the sheet pan, transfer to cookie rack for best results.

    I made these the other day, it took less than 30 mins from start to finish, including dishes. They look really greasy before baking but end up with crispy edges and soft insides, and are really yummy. They stay soft and fresh in an airtight container up to a week(so far anyways, lol) Good luck!
