Question:

Good side dish with goulash?

I'm making a Hungarian goulash with buttered noodles, and I'd like something on the side. Maybe a salad? Other suggestions?

  1. Since it is probably going to be pretty meaty and spicy I would say something light and refreshing such as a greek salad, tomatoes, boccancini and basil with balsamic, side garden salad, or a selection of marinated or pickled veggies.

Definitely a garden-type salad with lots of shredded veggies, or maybe a mesclun-type ( = mixed baby greens) or even a simple one of torn romaine leaves with fresh-ground black pepper, some crumbled bleu cheese OR grated parmesan, with a simple dressing of fresh-squeezed lemon juice and a drizzle of olive oil...the lemon will help to cut the heaviness of the meat and the buttered noodles.

    Sounds yummy.

    See if you can find a bottle or two of a good Hungarian red wine called Ekri Bykaver to go with the meal.

  4. I like a nice garlicky saute of veggies, mashed potatoes are great if u dont mind the extra carbs.

    A refreshing salad, displaying the colors of Hungary! Red, White and Green.

    3 or 4 large juicy fresh tomatoes

    1 cucumber peeled, scored with a fork and thick sliced

    2 banana peppers sliced or 1 green pepper seeded and chopped

    1/8 cup of chopped Italian flat leaf parsley -OR- 1 tsp. of minced fresh dill

    1 small peeled onion sliced thin

    1 garlic clove minced

    3 Tbs. of vinegar

    1 tsp. sugar

    6 Tbs. of oil

    Salt and pepper

    Slice the tomatoes and place in salad bowl.

    Peel cucumber, score lengthwise and slice.

    Slice the banana peppers or chopped seeded green pepper.

    Add the chopped parsley or dill, sliced onion, minced clove and toss together.

    Add to bowl vinegar, sugar and oil.

    Toss again, taste and adjust seasoning by adding salt and pepper if needed.

    Let sit for 1/2 hour to mingle flavors.

    liberal amount of mayo on it

    nice slice of sweet onion

    tomato

    Pepper or hot paprika
