  1. go to the store and under the ethnic food isle they sell coconut cream in cans....so you don't have to crack your head, i mean a coconut


  2. Try the link below - it starts with an advert for NS&I - yeah, but it has to be paid for somehow.

    In this recipe for Pina Colada - you don't have to smash open a coconut - it uses coconut cream instead, which you can get from your supermarket in a tin can.  It goes with curry as well by the way, the coconut cream I mean.

  3. SIMPLE PINA COLADA

    235 ml coconut milk

    235 ml pineapple juice

    120 ml rum

    50 g white sugar

    8 cubes ice



    In a blender, combine coconut milk, pineapple juice, rum, sugar and ice. Blend until smooth. Pour into glasses, and serve immediately.

    PINA COLADA PUNCH

    1055 g vanilla ice cream, softened

    1 (20 ounce) can crushed pineapple

    224 g coconut cream

    1 litre pineapple juice

    475 ml light rum

    1 (2 litre) bottle lemon-lime flavoured carbonated beverage

    In a large plastic container, combine ice cream, crushed pineapple, coconut cream, pineapple juice and rum. Mix well and slowly stir in the lemon-lime soda. Freeze for 4 hours or until slushy.

    You can substitute rum for vodka to create a Chi Chi. No Pina Colada is properly dressed without a wedge of Pineapple, preferably with a maraschino cherry spiked into it with an umbrella - Del Boy eat your heart out!!!

  4. I cheat and buy the pre-made mix from the liquor store.  I think it is a parrot bay mix, Not sure of the name but it is usually right beside the rum.....  I is soooooooooo good.  Buy a pineapple and put a chunk on the side on the glass.  YUM
