Good vegetarian dinner?

i'm pretty picky. not a huge fan of vegetables.

i know i know. "well then why are you a vegetarian"

i'm not looking for that. just some yummy recipes that have been tried. thanks. :)

    indian food & asian food are really good for vegetarian meals. i'm a lacto-vegetarian and i cook most of my own food. stiry frying is super easy & beans are really helpful. i can't eat wheat but you can use bread and flour tortillas to make a ton of stuff. plus you can eat most fake meats.


  2. Do you have any veggies in particular that you don't like? Is it leafy veggies, or roots, or fruiting veggies? Because if you include something really small and innocuous then you can get the extra nutritional benefit without the flavour sticking out.

    Some meals I love:

    Dhal (especially made from puy lentils) with spices and maybe coconut

    Adzuki bean stew

    Bean burritos

    Japanese noodle and miso soup with smoked tofu and ginger

    Chick pea casserole

    Risotto

    Tempeh kebabs (excellent for a veg BBQ)

  3. Um...I suggest that if you are a VEGETarian, you learn to like VEGETABLES. Wouldn't that make a modicum of sense?

  4. whole wheat spaghetti

    get a canned/jarred sauce and hide vegetables in it by pureeing things like spinach and kale and mixing them in.  Puree them really good.

    if you like garlic you can add some garlic to the sauce or by the roasted garlic flavor.  smear garlic on some french bread and margarine

    Do you like salad?  If not so much make it better by adding things like sunflower seeds and a good dressing, I'm sure you kind find one you like.  Or make a taco salad and break of corn chips in it.

    Nachos

    refried beans, diced onion, olives, avocado

    bean burritos

    beans, brown rice, diced onion, other vegetables of choice

    fried rice

    saute leftover rice and any vegetables you like, scramble in an egg (if you eat eggs) and add as much soy sauce as you want.

    You must like corn or green beans??  Add margarine and salt and pepper if you must.

    sneak some vegetables into fruit smoothies.  (Spinach is good, or tomato)  

    sneak some vegetables into your juices (juice some whole carrots and a lot of fruit), or buy V8 splash which tastes so good and has a serving a vegetables, so do kagome but they're pretty pricey

    Flat earth chips have a serving of vegetables in about 24 chips

    More Dinners

    *pasta with alfredo sauce

    *fried bake eggplant

    - dip thin slices of eggplant in fat free italian dressing, then in seasoned bread crumbs then bake on baking sheet for about 30 minutes at 400 degrees.

    *Soup and Sandwiches (grilled cheese, or fried egg, anything you want)

    * quesadillas

    *boca burgers or other meat replacements

    *I once used boca crumbles in place of beef in hamburger helper and it was really good and my meat loving bf liked it too

    *Pizza without meat (or you can use boca crumbles)

  5. Well i am not a fan of vegitables but i have an amazing recipee that is so savory and yummy you wont even care

    Vegan stir fry

    -1/4 cup bell peppers

    -1/4 cup greenbeans

    -1/6 cup of water chessnuts

    -1/4 cup snow peas

    -1/6 cup carrots

    1/6 cup celery

    1/6 cup onion

    sautee all the vegitables up in 2 tablespoons olive oil until tender

    add 1/2 cup of teryaki sauce

    put lid on you pot and let simmer for 20 min

    add more sause and soy sauce to taste serve alone or on noodles or rice

    it is yumm

  6. Trust me this is the best veggie burger recipe in the whole world!!! I could get into trouble posting this here, because I had to pay for it.

    Venetian Veggie Burgers

    1/4 C. onions, finely diced

    1/4 C. green peppers, finely diced

    1/4 C. red peppers, finely diced

    1 T. olive oil

    1/4 C. carrots, shredded

    1/4 C. zucchini, shredded

    1 T. garlic, minced

    2 C. TVP granules

    1/4 C. quick-cooking rolled oats (not instant)

    2 t. onion powder

    2 t. dried basil

    2 t. dried oregano

    1 t. dried marjoram

    2 C. water

    1/4 C. tamari

    2 T. ketchup

    2 T. peanut butter

    1/2 C. bread crumbs

    1/2 C. whole wheat flour

    canola oil

    8 hamburger buns

    choice of toppings and condiments

    In a non-stick skillet, saute onions and both peppers in olive oil for 3 minutes. Add carrots,

    zucchini, and garlic and saute an additional 2 minutes. Set aside. In a large bowl, stir together

    TVP, oats, onion powder, and dried herbs. In a small saucepan, bring water to a boil. Add

    tamari, ketchup, and peanut butter to the boiling water and whisk well to combine. Stir wet

    mixture into the TVP mixture and let sit for 10 minutes. Add sauteed vegetables, bread crumbs,

    and flour to the bowl, and stir until well combined. Using a 1/2 C. measuring cup, loosely pack

    to portion burger mixture into 8 patties. Lightly oil a non-stick skillet with canola oil, cook

    burgers in batches of 4, over medium heat, until well browned on both sides. Serve on buns with

    your choice of toppings and condiments.
