Good vegetarian dish to use pinto beans/black beans in?

Hey there, so I have like half a bag of black beans, and whole bag of pinto beans, I don't know what to do with them, what is your fav vegetarian dish that involves these beans?

  1. Tacos. I also use kidney beans but usually I use canned because I am busy and lazy. I use carrots and onions w/ a bit of salt and cumin. Let the onions get translucent and add diced/chopped tomatoes and green chilies. If you are feeling a bit fancy use fire roasted tomatoes. Added cooked beans.  

    Chop up your favorite veggies and put them in a bowl and salt. Add mexican seasoning and mix w/ the veggies. Let this sit a bit and pit in a pan with oil and fry a bit.


  2. If you cook these beans do it separately as even after soaking the black beans will take longer to cook. Remember that when you cook beans that they bulk up to triple so don't use the whole bag of pintos. Use only 3/4 cup or so. Soak beans overnight. Dump the water. Put fresh water on the two pots of beans. Cook carefully on med to low flame or burner and make sure to add water as needed until beans are soft enough. Salt after they are almost fully cooked.

    I think a soup might be a good thing to do with the beans.

    Have you got onions, garlic, celery and maybe some leeks. I love the flavor that you get from the leeks. Start a basic vege broth by putting a little oil in the bottom of a nice dutch oven sized pot. Cut up an onion or so, three or four stalks of celery using the inner leaves for lots of flavor, garlic to taste (three or so cloves) and add water to the veges after gently sauteing them in the oil.

    Add carrots, green beans, corn and green peas (or the mixed frozen veges) and add more water. Season with oregano, parsley, poultry seasoning and a little soy sauce. Add the beans when everything else is soft and the broth is flavorful. Add salt to taste. A small can of tomato sauce and a few pieces of any macaroni that you have on hand will make a very high protein and nutritious pot of soup.

    It should keep well in the fridge. Freeze some if you like.

  3. I'd make a veggie chili with them.  

  4. Soup is good with different veges cooked together in one pot,like carrot,potatoe,beans,parsley,cabbage/cau... etc.Plus I like cooking separately beans and separately rice and then having one dish of the both rice and beans.
