  1. Shahi Paneer

    Ingredients

        * 250 gms paneer(Cottage Cheese)

          For gravy

        * 4 large tomatoes, chopped

        * 1 onion, chopped

        * 1/3 cup milk or thick cream

        * 1/4 cup curd

        * 11/2 tbsp cornflour, dissolved in 1/2 cup water

        * 1 tbsp tomato sauce

        * 1/2 tsp chili powder

        * 1/2 tsp pepper powder

        * 1/2 tsp garam masala (Mixture of spices like clove, black piper, cinnamon, cardmom etc)

        * 1.5 cm ginger chopped

        * 2 black cardamoms, crushed

        * 1 green chili, chopped

        * 2 tbsp ghee (Milk Fat)

        * 3 tbsp coriander leaves, chopped for garnishing

        * Salt

    Method

        * Cut paneer into finger shaped pieces; deep fry & keep aside

        * Heat ghee, add onions, ginger, green chili & black cardomoms; fry until the onions turn light brown.

        * Add tomatoes, add curd, saute for some time. Remove from heat.

        * When cool, grind to a puree, add water if needed.

        * Add cornflour paste, stirring continuously.

        * Add salt, chili powder, pepper powder, garam masala powder and tomato sauce.

        * Cook till the gravy is thick.

        * At the time of serving, heat gravy, add paneer, add the cream or milk and lastly the coriander leaves.

  3. In the morning you can eat any of these: pancakes; waffles; fruit; oatmeal; cereal; eggs; bagel with spread; hashbrowns; or donuts. Most normal breakfast items are allowed so you could pretty much eat anything you would normally eat.

    Lunch or dinner: veggie burger; veggie dogs; salad with flavored or grilled tofu; pb&j; grilled cheese; or stir fry.

    Stir Fry with tofu:

    1 serving of tofu

    onion

    pepers

    carrotts

    snow peas

    corn

    mushrooms

    1 tbl spoon of oil

    Simply cook the onion and tofu and add the veggies that cook quickly later on. Cook on medium or high.

    oh ya, you can also eat any pasta and rice or beans.

  5. Vegetarian Stroganoff (I eat it over rice instead of noodles)

    1 stroganoff packet (check the back to get one without meat)

    Firm tofu

    Mushrooms (fresh)

    Sourcream

    Olive oil

    Water

    Drain tofu and pat/ squeeze excess water off. Add a little oil to a frying pan and crumble in tofu saute til tofu starts to brown, add mushrooms and cook til tender. Add stroganoff packet, water (it will say how much on packet) and simmer for 10 mins. Remove from heat and add sourcream (I also like to throw on a little garlic salt). Serve over rice or noodles. For an added kick to can throw a little bit of blue cheese on top as well.

    I have served this to many a meat eater and they always love it.
