Good vegetarian meal recipes ?

Please can anybody tell me a good and easy vegetarian recipe so i can start making my own meals, because my mum doesnt think i eat propley and if i dont start eating she will make me eat meat because she thinks i am ill :( Please help !

  2. You can buy cans of lentil soup....its really high in protein and it tastes amazing! Just add some cayanne pepper and it gives it a good kick! Also you can make bean burritos--Black beans,brown rice,salsa(mix and cook) then put in a pita and add   more salsa,lettuca& or veggies. Also you can have beans,rice,veggies--high in protien and taste--just try to mix what veggies you like with different beans. Also tofu stir fry is good and healthy since tofu is very high in protein.

  3. My daughter loves pasta and frozen mixed vegetables with edamame mix it up add a little butter and garlic salt.  Sweet potatoes and cottage cheese are really good together, also.

  5. Just google for vegetarian recipes ( or quick vegetarian recipes ). There are thousands of them on the net.

  6. Cook up some tempeh or tofu and mix in with some beans and rice or quinoa. Make peanut butter smoothies. Have a TVP crumble burger or chili. Make/eat lentil soup. Tofu, lentils, nuts, beans, peanut butter, soy milk, quinoa, couscous, seitan, tvp, tempeh, vegetables, seeds, are all great sources of protein look for recipes with those.

    More ideas:

    Pita bread with falafel, avocados, & hummus.

    Vegan chili made with black beans, kidney beans, corn, green beans, chili sauce, taco seasoning, tomatoes, green peppers & onions.

    Baked/fried/BBQ tofu, seiten, TVP, or tempeh.

    Cook and fry a large portobello mushroom and make a burger.

    Stir fry and season rice/couscous/quiona, beans, and vegetables.

    Bean, rice, & veg cheese burrito or quesadilla.

    Sandwiches (like tempeh lettuce & tomato, tofurky cheezsteak, roasted vegetable etc).

    Breaded or stuffed mushrooms

    TVP and bean tacos, cook tvp with cornstartch, water, and spices to make tacos

    Cereal or oatmeal with fortified alternative to milk (such as soy milk, almond, rice, hemp, etc), with nuts and fruits on the side (or mixed in!)

    Tempeh bacon with tofu scramble

  7. Ok... i love this!

    You'll need:

    Pasta (any shape you like)

    Fresh tomatoes

    Basil (or any other herb you like i guess)

    Onions

    Garlic

    Vegetarian feta (just make sure its got vegetable renet instead of calf renet!)

    Olive oil and salt and pepper to taste!

    Just cook the pasta, then in a small pan fry off the onions in a bit of olive oil until they are transperant.

    Add the garlic, basil and chopped tomato.

    Cook briefly (about 2 minutes)... and then mix it all together and add the feta and eat.
