Good vegetarian recipes? Meat substitutes?

Anyone have any good vegetarian recipes? I hate tofu, I got it for the first time and it stunk bad! So tofu is out of the question.

Ummm, dumb question::: Are eggs considered meat? I am eating an unborn animal so I guess I should stop eating those too. What can I eat as a veggie!?

  1. Mushrooms like portabellas have a meaty texture. Morningstar Farms has vegetarian meat substitutes that are pretty good.  Amy's has a really good vegetarian chili.


  2. eggs are vegetarian (or else you're getting into being vegan. If the egg was never fertilized it did not become an animal therefore you are not killing an animal to eat it. Be sure to get your eggs from happy chickens though- not factory eggs! (from pastured chickens))

    I've only had it at restaurants but seitan is delicious. I'm not big on tofu either, and when I do eat it in a dish I cut it into small cubes so it is there for protein but the flavor and big chucks of texture don't do it for me either.

  3. lots of vegetarians still eat eggs, they actually aren't unborn animals, b/c their not actually fertilized which is what needs to happen for a chick to be born.  There's lots of soy foods that taste just like the real thing, such as soy burger, hot dogs, chicken, etc.  I don't know how you prepared your tofu, but plain or unseasoned it is pretty gross, I like to marinate it, and eat it in stir frys, and it tastes really good that way.   I also eat lots of whole grain pastas.

    Edit:  As long as you're not going vegan you can eat anything you want, as long as there is no meat or meat used to flavor it
