  1. There's a whole science and art to making great BBQ ribs. Best is to cook very slowly and for a long, long time. If you don't have a BBQ smoker, one where the wood burns off set to the place where the meat cooks (see link for picture of simple one), here's what I'd do.

    1. Rub meat with some mix of ground pepper, paprika, salt, chile powder (there are commercial rubs for sale too in most grocery stores). Cover and refrigerate for 3-4 hours or overnight.

    2. If it's for evening, around 10 a.m. put 'em in a pan and begin baking at about 225F. Let 'em simmer away until 3.

    3. Then remove and slather with a good quality BBQ sauce. Back in oven until 5:30 by which time have your regular BBQ grill fired up fairly hot.

    4. Carefully (because by this time they are falling off the bones) put ribs on the grill for about 5 minutes a side. Watch carefully that they don't burn. You want a little char but not much.

    P.S. Just saw first posting which is a simple approach if you like pork ribs sashimi style ;-(
