  1. Bourbon-Mango Pulled Pork

    INGREDIENTS

    2 mangos

    1 (4 pound) pork shoulder roast

    15 g ground black pepper

    5 g kosher salt

    0.8 g chipotle chile powder

    60 ml balsamic vinegar

    475 ml water

      

    0.8 g chipotle chile powder

    10 ml honey

    45 ml bourbon whiskey

    672 (12 ounce) bottles barbeque sauce

    DIRECTIONS

    Peel the mangos and remove the pits. Place the pits into a slow cooker, then roughly chop the mango and set aside. Place the pork shoulder into the slow cooker, and season with the black pepper, kosher salt, and 1 teaspoon chipotle powder; pour in the balsamic vinegar and water.

    Cover, and cook on Low 5 to 8 hours until the meat is very tender. Once done, drain the pork, discarding the cooking liquid and mango pits, and shred with two forks.

    While the pork is cooking, puree the chopped mango in a blender until smooth, then pour into a saucepan along with the honey, 1 teaspoon chipotle powder, and whiskey. Bring to a simmer. Reduce heat to medium-low, and simmer, stirring frequently until the mango has reduced and darkened slightly, about 10 minutes. Stir in the barbeque sauce, and remove from the heat.

    Return the shredded pork to the slow cooker, and stir in the mango barbeque sauce. Cover, and cook on High 1 to 2 hours until the pork absorbs the barbeque sauce.

    Awesome Slow Cooker Pot Roast - VERY delicious;

    2 (10.75 ounce) cans condensed cream of mushroom soup

    1 (1 ounce) package dry onion soup mix

    1 1/4 cups water

    5 1/2 pounds pot roast

    In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.

    Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.

    Serves 12.

    Slow Cooker Beef Stroganoff - Also delicious;

    1 pound cubed beef stew meat

    1 (10.75 ounce) can condensed golden mushroom soup

    1/2 cup chopped onion

    1 tablespoon Worcestershire sauce

    1/4 cup water

    4 ounces cream cheese

    In a slow cooker, combine the meat, soup, onion, Worcestershire sauce and water.

    Cook on Low setting for 8 hours, or on High setting for about 5 hours. Stir in cream cheese just before serving.

    Serves 4.

    SUNNY SIRLOIN STEAK

    1 lb. beef top sirloin steak

    1/2 c. fresh orange juice

    1/4 c. light soy sauce

    2 tbsp. dry sherry

    1 clove garlic, minced

    2 dashes ground cloves

    Combine orange juice, soy sauce, sherry, garlic and cloves. Place steak in plastic bag; add marinade, turning to coat. Tie bag securely and marinate in refrigerator 2 to 4 hours, turning at least once. Drain marinade from steak. Place steak on rack in broiler pan so surface of meat is 3 to 4 inches from heat. Broil 8 to 9 minutes, turn and broil second side of steak 8 to 9 minutes to desired doneness (rare or medium). Carve into thin slices. 4 servings.

    vegetarian:

    MARINATED THREE-BEAN SALAD

    1 (8 1/2 oz.) can lima beans

    1 (8 oz.) can cut green beans

    1 (8 oz.0 can red kidney beans

    1 med. onion, thinly sliced and separated into rings

    1/2 c. chopped green pepper

    2/3 c. vinegar

    1/2 c. salad oil

    1/4 c. sugar

    1 tsp. celery seed

    Drain the canned beans. In a large bowl combine the lima beans, green beans, red kidney beans, onion rings, and green pepper. In a s***w top jar combine vinegar, salad oil, sugar and celery seed; cover and shake well. Pour vinegar mixture over vegetables and stir lightly. Cover and chill at least 6 hours or overnight, stirring occasionally. Drain before serving.

    QUICK THREE BEAN SALAD:

    Prepare Marinated Three Bean Salad as above, except substitute one 8 ounce bottle Italian salad dressing for the vinegar, salad oil, sugar and celery seed. Continue as directed; marinate in refrigerator for 1 to 1 1/2 hours. Drain before serving. NOTE: Wishbone Italian Classic with Olive Oil is great! Makes 6 to 8 servings.

  5. Mulled Wine.

    3/4 fill your slow cooker with red wine. It doesn't need to be expensive, cheap will do.

    Stir in 1 cup of brown sugar

    6 or 8 cloves

    3 or 4 cinnamon sticks

    Cook on low until all the brown sugar has dissolved.

    Ladle into a cup and enjoy in front of an open fire.

  6. Irish stew.  The cheaper the cut of meat when using a slow cooker the better as they are tastier than expensive cuts but needs long slow cooking.  Neck end of lamb is traditional in Irish stew. Through in your lamb add water or stock, potatoes, carrots, onions and a handful of pearl barley and let it cook all day.

    Also goulash made with cheap cut of beef like beef shin - add an onion, some garlic, a tsp each of paprika and smoked paprika and a pinch of cayenne pepper and a bit of water or stock.  Let it cook away and when ready serve with boiled rice or noodles and put a dollop of sour cream or natural unsweetened yogurt on top.

  7. get some cheap beef, dice it and toss it in some flour. Brown it in a fry pan. Put it in the slow cooker with just enough stock to cover it. Throw in thinly slice veggies and let cook all day  thicken 1/2 hour before serving with cornflour (mix to paste first with water)

  8. Boneless skinless chicken thighs with marinara poured over the top.  Low 6-8 hours. Serve with pasta, grated Parmesan cheese and a green salad.

    Polish sausage, sliced onion and green bell pepper, a bottle or dark beer.   Low 6 hours. Serve with mashed potatoes with a little mustard and cheddar cheese mixed in, and petite peas.  

    Pork loin, a can of cranberry sauce mixed with a heaping spoon of brown sugar, a spoon of mustard, and a heaping spoon or two of A-1 sauce.  Low 6-8 hours.  Serve with baked potato and green beans.

    Boneless skinless chicken pieces, sliced onion, sliced green pepper, a few cups of chicken broth, 2 heaping spoons paprika.  6-8 hours on low.  When done combine a container of sour cream (low-fat is good) with a heaping spoon of cornstarch or flour, and mix in with the crockpot mixture, let cook an additional 15 minutes, until thickened.  Serve over egg noodles, with steamed broccoli.
