its my little sisters graduation and were throwing her a big brunch on saturday ...any suggestions on some things we could serve?

  1. You could serve things like:

    Different types of Quiche

    Waffles or French toast or pancakes with choices of toppings

    Fresh fruit salad

    Different flavors of muffins

    Fresh Veggie tray with dips

    Spinach dip

    Scrambled eggs - plain and/or with ham and/or cheese

    Bacon

    Ham

    Sausage patties or links

    Cocktail wieners/meatballs in Sweet and Sour sauce or BBQ sauce

    BBQ beef/pork/chicken sandwiches

    Sloppy Joe's

    Potato Salad - maybe one made with mayo/Miracle Whip and one warm

    Hash browns

    Juices, soft drinks, punch

    Frittata(s)

    Fresh fruit shortcakes

    Meat and cheese trays with the fixings for people to make their own sandwiches - sliced turkey, roast beef, ham, Swiss cheese, Amerian Cheese, Provolone Cheese, mustard, Miracle Whip, lettuce, sliced tomatoes etc.

    Relish trays with pickles, olives, deviled eggs etc.

    Jello salad(s)

    Garden salad with your choice of salad greens, sliced peppers - red, yellow and green, chopped eggs, sliced cucumbers, sliced radishes, shredded carrots, shredded cheese, sliced mushrooms, chopped sweet/red onions, cherry/grape tomatoes and several choices of salad dressings

    Hamburgers, hot dogs, sausages like Bratwurst cooked on the grill

    Shrimp or seafood cocktail with homemade cocktail sauce - use boiled shrimp, imitation crab meat, crab meat

  2. I like this...  Berry Bruschetta:

    Ingredients:

    10 slices French bread (1/2 inch thick)

    5 teaspoons Splenda sugar blend for baking, divided

    6 ounces fat-free cream cheese

    1/2 teaspoon almond extract

    3/4 cup fresh blackberries

    3/4 cup fresh raspberries

    1/4 cup slivered almonds, toasted

    2 teaspoons confectioners' sugar

    Directions:

    Place bread on an ungreased baking sheet; lightly coat with cooking spray. Sprinkle with 2 teaspoons sugar blend. Broil 3-4 in. from the heat for 1-2 minutes or until lightly browned.

      

    In a small bowl, combine the low fat cream cheese, almond extract and remaining sugar blend for baking (Splenda) . Spread over toasted bread. Top with berries and almonds; dust with confectioners' sugar. Yield: 10 pieces.

    I've made it several times for work brunches.  It's a big hit!
