Question:

Greek style beer can chicken?

I am going to make chicken souflakis for dinner tonight. And instead of kabob chicken I want to make a more moist roasted chicken, then I thougth why not beer can chicken. What spices and which beer should I use to go with the flavors of the tazaki sauce?

  1. Any beer really works, and I would just go with a chicken rub, or just salt & pepepr.

Virtually any style of beer will do.  There are two conflicting schools of thought as to whether or not you can even detect the taste of the beer at all.  If you have access to Greek beer (very unlikely; I can't think of any brands available in the United States), you can certainly use it, although a regular Miller High Life or Burdweiser would also do.  If you have access to Metaxa-the Greek version of brandy-you could add a tablespoon or two of that to whatever beer you use.

    As for spices, you could stick with traditional spices that you would use on kebobs.  Another option that would work well would be a spice mixture that included oregano (even Greek Oregano if you can get it), thyme, garlic, and onion, along with salt, pepper, and related spices.  Avoid mint, as it is a traditional Greek flavoring, but it is better enjoyed with lamb than with chicken.

    If you don't mind using pre-mixed spice blend from a container, there are a few traditional blends available on the market that might work here.  Cavender's Greek Seasoning is one excellent option that is available in some markets.

    With any spices, you might have to do some experiementing to find something that works with your tazaki sauce recipe.  I don't recall the exact ingredients to this sauce off of the top of my head, but the information that I provided is typical of Greek Cuisine.  Just remeber that you don't necessarily have to match flavors; contrasts and complementary flavors can work well too.

  3. EVOO, kosher salt, black pepper, lemon, and lots of oregano!  (I'd slip lemon slices and oregano under the skin where possible.)

  4. Any beer works, definitely.  I've read that you can also use any kind of soda that you like, but I haven't tried it, so I can't say if it is good or not.

    Oh, we call it drunken chicken down south... ha ha... ;)

  5. darker beers impart a better flavor into the chicken, unfortunately they are usually only bottled, and not produced in cans.

    take a coke can and rinse it well, open the top up and pour in a good dark beer.

    seasoning?

    rosemary may work well, thyme possibly too.
