Green Tea preparation- What will happen water boiled at 100C and brew? ?

Green Tea Packs advise boil the water around 85C-90C only

  1. Boil the kettle, wait a minute before pouring the water onto the leaves.  Easy.


  2. if you use boiling water, the tea may become bitter.  It might not. Some green teas are different.  If you do use boiling water, don't steep it very long.   Take the bag out after 20 or 30 seconds.
