Grilling ground elk burgers?

Having an exotic meat dinner tonight. I'm serving buffalo steaks and elk burgers. I've grilled buffalo with great success, but never cooked elk before. Should the elk be cooked just like beef? What about adding cheese on top-would that enhance or detract from the taste of the elk?

  1. not sure about the burgers, depends on how thick you make them. as far as cheese, if you do put something on, maybe try a pepper jack or reg. jack cheese. it melts very well and wont be distracting.


  2. I would add onion, fresh that is, to the elk burgers.. it will make it moist and yummy... it can get tough and dry if you don't add that.

    also, cheese should be served on the side.. it depends how gamey the meat is.. if it has a gamey taste, then cheese makes it taste weird... taste a piece first, and see if cheese would be good on it, and then if it is, melt it on to the patties.

    Black pepper really enhances the taste of elk.

  3. Spicy Grilled Elk Burgers

    Ingredients:

    1 1/2 pounds ground elk meat

    1/4 cup kethcup

    1/4 onion, minced

    2 chipotle peppers in adobo sauce, finely chopped

    2 cloves garlic, minced

    1/2 teapsoon salt

    olive oil

    hamburger buns

    Preparation:

    Place meat in a large mixing bowl. Add minced onion, garlic, ketchup, chopped chipotles, and salt. Mix well and form into 4 large patties. Preheat grill for medium heat. Brush patties with olive oil and place onto grill. Cook for 5-6 minutes per side. Remove from heat and serve on burger buns with favorite condiments.


  4. I stand and applaud you - I could never manage to get an elk under the grill.  Not while it was still breathing.  Maybe add elk cheese to add that little exclusivity?  Elkburgers are so yesterday.
