  1. I slice mine lengthwise (1/4 inch-1/2 inch) to make a "cutlet" of sorts and marinate it either Italian or asian dressing at room temperature for 4-5 hours and grill.   YUM  


  2. I do not have time to grill my zucchini because I eat them as snacks.  I just wanted to share this serving suggestion with you. One zucchini - cut into 8 pieces - put (covered) in a microwave for 4.5 minutes - then eat with mayonnaise on top. Great for afternoon snacking ♥

  3. Back to the stuff on a stick...

    Everything you put on a medley stick has a different cooking time.

    The stuff that cooks the fastest goes in the middle of the stick.

    The stuff that cooks the slowest goes on the ends.

    Put squash and mushrooms in the very middle, squeezed in tight.

    Put the meat on the ends.

    I like to put one slice of onion between everything.

    The best sauce is Teriyaki...


  4. i shred and dry my zuchs..

    not too crazy about them. lol

    saute them with stuff.

    but i barbque mini spaghetti squashes like Sptfyr

    with clarified butter/basil/ honey/pepper/hot sauce/ mix..they take awhile..

    foil at first to kind of bake, then just barbque em..

    turn over to 'toast'

    and just eat the spaghetti insides.

  5. If you take small zucchini and cut them lengthwise, you'll find that it's really easy to grill. I'd suggest sprinkling a little Parmesan cheese over them before you serve.

    Prep Time: 10 minutes

    Cook Time: 10 minutes

    Ingredients:

        * 3 large zucchini cut into 1/2-inch-thick slices

        * 3 tablespoons olive oil

        * 2 teaspoons oregano

        * 2 garlic cloves, minced

        * 1/4 teaspoon rosemary

        * salt and pepper

    Preparation:

    Preheat grill. Brush zucchini with olive oil. Sprinkle both sides of zucchini with oregano, garlic, rosemary, salt and pepper. Grill until zucchini is tender, about 4 minutes per side.  

  6. I hear ya big time.. So many zucchini here! I slice them about a quarter inch thick and baste with olive oil and sprinkle either Cajun seasoning or just pull them off and sprinkle with fresh basil (also from the garden). However, if you would like another idea on how to use the Z's: we just made a vegetable lasagna using them instead of the lasagna noodles. But have to bake or grill them first just for a bit. Also chopped some up the other night and added to a pot of swiss chard.. was absolutely great.

  8. Once you have stuffed zucchini, I don`t think you`ll want it any other way! Yummy 4 my healthy tummy.

    Stuffed Zucchini (Kosa Mahshiya)

    Ingredients:  

    1   kg zucchini

    1/2   kg beef

    2    onions, finely chopped

       cooking oil

       salt

       pepper

    1 1/2   cups rice

    3   cups tomato juice

    2   tablespoons cooking oil

       salt and pepper

    Instructions: 1. To prepare the Savory minced Beef (Lahma Mu'assaga), mince or grind the beef coarsely.

    2. Brown the onion to a pale golden color, then add beef and seasoning and cook until the juice is absorbed.

    3. Mix meat with rice and seasoning.

    4. Fill Zucchini loosely with rice mixture and arrange in pot.

    5. Season tomato juice, add 2 tablespoons cooking oil, and pour over Zucchini.

    6. Cook for about 30 minutes.

    PS  I do a veggiterian stuff, which contains fresh parsley, fresh dill, fresh cilantro, browned onion, and rice! hmm hmm hmm Oh and spices are salt, and cumin, a lil bit of coriander.

  9. STUFFED ZUCCHINI ON GRILL  

    2 med. size zucchini, cut in half

    Cut ends off, scoop out seeds, and fill with browned ground round, cooked with chopped onion. Place Mozzarella cheese over the meat mixture, cover with tomato sauce, seal in heavy foil, place on grill for 45 minutes at medium heat.


  10. slice in half length wise and then make small cuts on the inside down the length of the zucchini...brush with honey and sprinkle with Italian seasoning.   Set on the grill green side down until almost done and then turn over for the last moment or two.

  11. i slice and marinate it in Italian dressing, then put on the grill until its really toasty brown. i also baste the zucchini while cooking with the dressing. yum!
