about how much cinnamon is in the Dulce de Leche? The recipe I have doesn't specify, and I don't want to over- or under-add it.

I would add it to taste:  I am referring to ground cinnamon powder.  It's pretty concentrated, so a little goes a long way!

a pinch for just a hint of cinammon flavor

1/8 tsp for a little flavor

1/4 tsp for a stronger flavor

PS:  I know the recipe, it just says "canela" --- I think it's the same one you have.
