Guatemalan foods?

This summer I'm spending a month in a small highland town in Guatemala to do field work. Most of what we're going to eat is going to be made by the ladies in the booths in and around the plaza. I was wondering, what foods are common in rural Guatemala and what should I be on the lookout for (whether it's good or bad)?

  2. carnitas, tacos, chiles rellenos, guacamole and good Gallo beer, savoring a bountiful midday repast for $5 apiece.  Lunch at the nearby Mayan Hotel was a prix fixe menu of red pepper soup, a special plate of rice, grilled chicken, chorizos, beef strips, and guacamole, and strawberry ice cream for $7.
