Just translate "You are beautiful" with an online translator.  Even if the grammar is wrong, I'm sure she'll understand what you're trying to say. ;)

be honest to her. say whatever you like to her, in whatever form of the Polish language you know. Don't pretend to know Polish perfectly, because after sometime she will know that you aren't. Keep your sentences as simple and as to the point as you can.

You are trying to take up a really hard challenge here, man :) You've already got the translation for "you are beautiful", so let me be the one that will guide you a bit further :)

I can see you stick up to say something like "you're a hot chick". In Polish it is "gorąca z Ciebie laska" (pronunciation: gho-rh[/ɔ̃/]tscha z tschie-bhie laaskha).
