If your visa indicates it is valid for multiple-entries, then yes you can leave and come back in with that visa.

However, once the visa expires in seven days, regardless of if it is a single-entry or multi-entry visa, you would still be required to leave and obtain a new visa for the next time you want to come into Canada.

If  it is multiple you can leave and return, but a single-entry visa has already served its purpose, since you are now in Canada. If you leave you will have to get a new visa to return.

In either case, the expiry date does not change and once the date has passed you need a replacement.

You can check with CBSA (Canada Border Services Agency) Immigration for the possibility of obtaining a visa renewal while you are still in Canada.
