  1. Slice your cucumber to the thickness you desire. (peeling optional)

    Place in a clean glass jar and pour over malt vinegar.

    Add the lid and refrigerate until you are ready.

    Will last for about 3 days.

    INGREDIENTS

    3 cups thinly sliced cucumbers

    1 small sweet red pepper, julienned

    1/2 cup chopped sweet onion

    1/3 cup sugar

    1/4 cup white wine vinegar

    1 1/2 teaspoons salt

    1 teaspoon dill seed

    DIRECTIONS

    In a large bowl, combine all ingredients. Cover and refrigerate for at least 1 hour, stirring occasionally.

    Thai Cucumber Salad --

    INGREDIENTS

    3 large cucumbers, peeled, halved lengthwise, seeded, and cut into 1/4-inch slices

    1 tablespoon salt

    1/2 cup white sugar

    1/2 cup rice wine vinegar

    2 jalapeno peppers, seeded and chopped

    1/4 cup chopped cilantro

    1/2 cup chopped peanuts

    DIRECTIONS

    Toss the cucumbers with the salt in a colander, and leave in the sink to drain for 30 minutes. Rinse with cold water, then drain and pat dry with paper towels.

    Whisk together the sugar and vinegar in a mixing bowl until the sugar has dissolved. Add the cucumbers, jalapeno peppers, and cilantro; toss to combine. Sprinkle chopped peanuts on top before serving.

  4. wash the cuke, rubbing the water over it...slice about 1/8 inches...add some salt and pepper....poor some apple vinegar over it...thats all it is.............you may want to usr a peeler to take  the skin off, but its not necessary.

  5. slice the cucumber and some tomato.

    put it in a bowl of Balsamic Vinegar and a little olive oil. add some oregano and cracked pepper.

    let it sit in fridge for a day or atleast a couple hours

  6. I just use a potato peeler and remove the skin or peel . Then I slice them with a knife on a cutting board, slicing them across the cucumber and not length wise. Then I place them in a bowl and pour in enough vinegar to cover them. Be sure to use a bowl that comes with a top just in case you want to chill them in the fridge or if you have any left overs

  9. We call it Sunomono...

    Cucumber and Wakame Sunomono

    2 Japanese cucumbers (if you can't get a hold of them, use 1 regular cucumber with seeds removed)

    100 grams wakame seaweed (fresh or re-hydrated)

    Dressing:

    3 Tablespoons Japanese rice vinegar

    1 Tablespoon sugar

    1 Tablespoon dashi (smoked bonito stock)

    1/2 teaspoon salt

    Thinly slice the cucumber, and sprinkle some salt to soften. Chop wakame into bite-sized pieces. Rinse away the salt and squeeze the moisture out of cucumbers. In a separate container, add the vinegar, sugar, dashi, and salt together. Add cucumbers and wakame into the vinegar mixture and toss/mix well. Chill and serve.

    You can add minced ginger and/or (really, really tiny whitefish) to this sunomono.

    Basically, sunomono is a dish meant to complement oily, fatty food in traditional Japanese cuisine like tempura, so that's why we don't use sesame oil in the dressing.

    Or if this is too traditional....try Namasu...

    4 Young cucumbers, sliced

    -thick 2 Carrots, thinly sliced

    2 lg Onions, sliced

    3 Stalks celery, sliced

    1/3 c Brown sugar

    3/4 c Vinegar

    1 tb Salt

    1 ts MSG

    1 c Water

    1/4 lb Smoked salmon (lox)

    Should be prepared ahead Combine sugar, vinegar, salt, water, MSG, and bring to a boil. Pour over sliced vegetables. Cool. Refrigerate overnight.


  10. It is very easy all you have to do IS:

    1.- You slice the CUCUMBERS preferably in thin slices , but the thickness depends on you.

    2.- For every sliced cucumber you put 2  spoons of vinegar  , but you can also add some more if you feel like it..by now your basically done.

    P.S Personally this entreè is not very tasty on its own , i would recommend to add salt and pepper , and squish 2 limes for every sliced cucumber.

    1/2 teaspoon ground mustard

    In a large bowl, combine the cucumbers and onion. In a jar with a tight-fitting lid, combine the remaining ingredients; cover and shake well. Pour over cucumber mixture; toss to coat. Cover and refrigerate for at least 4 hours. Serve with a slotted spoon.
