  1. Herbal Pasta

    Ingredients

    Pasta - 1 cup

    Water- 4 cups

    Oil - 2 tsp

    Cilatro - 5 stems (finely chopped)

    Basil - fistful(finely chopped)

    Lime - 1

    Yogurd/ Curd - 3tsp

    Veggies - 1 cup (cut lengthwise - preferably green veggies like green beans, asparagus, celery etc)

    Green chilli - 1 (finely chopped)

    Salt - to taste

      Method

    1. In a deep pan heat water and bring it to a boil.

    2. Add pasta and let cook for 3 minutes, until it is half cooked.

    3. Now add the veggies and cook for another 6 minutes until everything becomes soft but still firm.

    4. Drain the water and keep aside.

    5. Meanwhile grind the herbs(cilantro & basil) along with yogurt.

    6. Take another pan and heat oil. Add green chillies and lime zest.Now add the pasta and the herbal paste and toss it together.

    7. Finally add few drops of lime juice.

    Things that I have put on pasta:

    A chili type mixture (actually had this first in Italy).  Red beans/pinto beans (or a combination), tomato's, basil, oregano, thyme - since your not doing the garlic and onion - how about some rosemary just to add a bit of a different taste? any other spices that you prefer?

    Why not toss some of your favorite spices in some olive oil in a frying pan along with any herbs that you like (I like and have used alone or in combinations cilantro, parsley) and add some of the veggies that you like such as kale, swiss chard, tomato, really anything that you like.

    The thought that one only uses tomato sauce on pasta is limiting - and something that I found that those in Italy didn't even do.  Considering that it was really an Asian dishes to begin with - just expand your view past the traditional.  Why not think along the line of ginger - maybe some bok choy added - how about some of the wonderful squash that is around in the markets at this time of year?

    Also, I like to fix up my pasta in advance since I work a full time job and don't want to spend all my time at the stove, put them in serving sizes within plastic bags with olive oil (to keep from sticking).  A great time saver and wonderful to have if someone drops in on you and you have to fix something to eat for others quickly.

    Hope this at the very least gets you thinking outside of the traditional and more along the lines of things that you can eat to meet your dietary needs.

  7. Saute mushrooms, zucchini and bell pepper in EVOO-serve over whole wheat pasta with a sprinkle of parmesan if you aren't vegan.
