HOW TO SKIN A CATFISH OR FILLET.

I ALWAYS CAUGHT CATFISH BUT TROW THEM BACK BECAUSE I DON'T KNOW HOW TO SKIN THEM.OR HOW TO FILLET THEM.

  1. it's ok to continue to throw them back. I think I remember my dad hammering the head to a big piece of wood and pulling the skin off with pliers. I would (if I ate catfish) filet it like I do a halibut though cut the pieces of meat away from the head and slide a very sharp and thin blade against the skin with the meat above it pushing down against the cutting board. Like a bass I guess too. But then again, I have never kept one, of either so enjoy.

You need a sharp fillet knife, a pair of skinning pliers,a cutting or fillet board, and a glove (catfish are bad about finning you).  Make a V-shaped cut just behind the fish's head, with the V pointing toward the fish's nose.  The cut should extend down the fish's side at least 2".  Now use your pliers and pull the skin off - all of it - all the way down to the tail.  Next, put the fish on its side and use your fillet knife.  Start your cut behind the front fins.  You'll feel the ribs with the blade - go over them, not through them.  Keep slicing down to the spine, and follow the spine all the way to the tail, and remove the fillet.  Flip the fish over and do the same on the other side.  If you throw the remaining carcass back in the water to feed the turtles, carp, and other catfish, slide your knife through the air bladder right behind the fish's head (where his neck would be, I suppose).  This way the carcass won't float on top of the water.
