Handmade noodles - small batch.

Does anyone know if it is possible to make just a small batch of handmade noodles (for a family of four) or does it have to be made only in big batches? Do you know anywhere online where there is a video of just a small batch being made?

  1. I like making noodles.  I'd say my average batch would serve about 6.  You could certainly make less.

    I often use the recipe that came with the pasta roller attachments for my Kitchenaid mixer.  It's at home (and likely copyrighted) so I can't post it for you here.  But basically get some pasta flour, add an egg or two, and a VERY small amount of water.  Mix until crumbly and just slightly clumpy (clumps will be like the size of grains of cat litter...actually not even that big).  Then you just roll it over and over.

    Update:  Oh, Chinese-style.  I was talking about Italian-style.


  2. You can reduce serving sizes by reducing the recipe ingredients in half.
