  1. Mint Humbugs

    Ingredients

    Oil, for greasing

    350 Gram Sugar (12 oz)

    5 Tablespoon Liquid glucose

    250 ml Water (8 fl oz)

    1/2 Teaspoon Cream of tartar

    1/2 Teaspoon Oil of peppermint, or to taste

    few drops Green food colouring

    Method

    Makes about 375g (13 oz)

    Combine the sugar and glucose in a saucepan. Add the water and heat gently, stirring until all the sugar has dissolved. Add the cream of tartar, bring to the boil and boil gently until the mixture registers 140 °C (275 °F) on a sugar thermometer, the small crack stage.

    Remove the pan from the heat and add peppermint oil to taste. Pour on to a lightly oiled slab or large plate. Divide into two portions, adding green colouring to one portion.

    Allow the mixture to cool until workable, then pull each portion separately. Using oiled scissors, cut into 1 cm ( 1/2 inch) pieces, turning the rope at each cut. When cold and hard, wrap the humbugs individually in waxed paper and store in an airtight tin.

    Clear Boiled Lollies and Drops

    1 1/2 cup sugar

    33/100 cup light corn syrup

    13/100 tsp cream of tartar

    3/4 cup water

    10 dash of flavoring (today, the choices are endless)

    1 x food coloring

    Slowly boil the sugar, corn syrup, cream of tartar, and water together without stirring, until it reaches 310F. Remove from the fire, and add your flavoring and food coloring. There are some wonderful flavors available today such as caramel, maple, and black cherry. You can find them at gourmet and specialty stores everywhere. After adding the food coloring, shape the mixture into drops, or lollypops, or if you have candy molds, use them to form molded candy.
