1 - The bartender knew he had hiccups and so he scared him to get rid of them

2 - You say to either door "if I asked the other door which door would lead to the city of truth, what would they say?" And take the opposite door.

3 - His parachute didn't open

4 - The paragraph does not contain the letter E, the most common letter in the English language

5 - A man with a watch on his wrist?  4 or 5 hands, cos some watches have a second hand.

6 - The music is playing in a hospital, it stops cos there's a power cut and her life support machine goes off and she dies.

7 - Water in it's 3 forms?  As liquid it soothes the skin, as vapour it's clouds in the sky, and ice can crack rocks if it gets inside them as liquid and then freezes and expands?

2 - I'd ask "are you a door" then pass through the one which answers yes.

6 - Had to cheat for this one, although I'm not sure about her ever being alive and so in the spirit of bad sportsmanship, I dispute it :P

7) I was going to say Water, but of course it has 4 forms, not 3 (solid, liquid, gas, plasma).
